Nuestro abuelo materno era carnicero y nuestro abuelo paterno criaba gallinas. En las reuniones familiares siempre hab\u00eda asado y pollo a la parrilla, o milanesas de nalga con pur\u00e9, o estofado con carne y salchicha parrillera acompa\u00f1ando unos fideos caseros o unos \u00f1oquis de papa. En nuestra casa se com\u00eda abundante y casero porque mam\u00e1 y pap\u00e1 eran apasionados de la cocina. Podr\u00edamos decir que el placer por comer se nos dio f\u00e1cil, aunque aprender a cocinar nos cost\u00f3 un poco m\u00e1s. Si uno est\u00e1 acostumbrado a comer rico y <em>fatto in casa<\/em>, no puede vivir a delivery o conformarse con cenar cualquier cosa. Aprendimos \u2013tuvimos que aprender\u2013 a cocinar en cuanto abandonamos el nido. M\u00e1s tarde, cuando nos hicimos veganas \u2013casi al mismo tiempo las tres hermanas\u2013 el mundo y la cocina se nos pusieron patas para arriba. \u00bfC\u00f3mo har\u00edamos una tortilla? \u00bfUna milanesa? \u00bfUna tarta? \u00bfC\u00f3mo preparar medialunas? \u00bfTendr\u00edamos que decirle adi\u00f3s para siempre a los bizcochitos de grasa? \u00bfA la pizza? \u00bfA las empanadas? \u00bfAdi\u00f3s al flan? \u00bfChau, mousse de chocolate? \u00a1No! Poco importan los motivos por los que uno se hace vegano: si te resulta un sacrificio, de seguro ser\u00e1 insostenible. Y ninguna de las tres estaba dispuesta a negociar el comer rico. As\u00ed fue como, de a poco, empezamos a \u201cveganizar\u201d los platos que ya conoc\u00edamos y que nos reconfortaban el alma; introdujimos algunos nuevos y decidimos volcar nuestras ideas en nuestro blog <strong>holaveganc1dev.wpenginepowered.com\/<\/strong>.<\/p>\n\n\n\n<p>La idea de este libro surge de la conexi\u00f3n con nuestras ra\u00edces. Loli (la mayor) vive en Europa hace m\u00e1s de cinco a\u00f1os y eso la hace a\u00f1orar a\u00fan m\u00e1s los t\u00edpicos platos argentinos. Y las que vivimos ac\u00e1 tampoco conseguimos con facilidad productos alimentarios veganos que satisfagan nuestro paladar. Creemos que los platos que m\u00e1s y mejor nos alimentan no son solo los completos a nivel nutricional, sino aquellos que nos conectan con lo que somos, con nuestra historia, con la comida que recibimos en casa cuando \u00e9ramos chicos. Esos platos que tambi\u00e9n son alimento para el coraz\u00f3n. Por eso, pensamos en el libro casi como en el men\u00fa de un bodeg\u00f3n porte\u00f1o, con recetas que nos ense\u00f1aron a preparar mam\u00e1, pap\u00e1, la abuela, el abuelo, pero con toques gourmet que logran adaptarlas a las exigencias del paladar actual. Cocinamos con ingredientes que se consiguen en el mercado local, preparaciones que nos traen al presente los recuerdos de la infancia, pero evitando hacer da\u00f1o a los animales. Son sabores \u2013en su mayor\u00eda\u2013 f\u00e1ciles de compartir con todo el p\u00fablico: veganos, vegetarianos y no veganos, porque apelan a lo conocido, a la memoria olfativa y gustativa.
