Si bien no soy cel\u00edaca ni tengo intolerancia al gl\u00faten, me estuve informando bastante acerca de \u00e9l y de lo que sucede en nuestro cuerpo cuando lo consumimos, as\u00ed que decid\u00ed ver qu\u00e9 onda.<\/p>\n<p>Ya habr\u00e1n visto en el blog varias recetas sin gl\u00faten y hasta una nueva secci\u00f3n. En el medio sigo subiendo recetas tradicionales, pero les cuento que desde hace 10 d\u00edas estoy libre de gl\u00faten y me siento maravillosamente.<br \/>\nSi bien, no voy a dejarlo para siempre, quiero hacer todo lo posible para reducir el consumo lo m\u00e1s que pueda.<\/p>\n<p>Hay muchas cosas que se pueden hacer y quedan igual o m\u00e1s ricas que las preparadas con harina de trigo. Sobre todo, la pasteler\u00eda. Las tortas, cookies y muffins quedan incre\u00edbles.<br \/>\nCap\u00edtulo aparte merecen los panes, todav\u00eda no he probado uno que merezca la pena compartir con ustedes, quedan como un poco toscos. Tengan en cuenta que yo soy MUY exigente con la calidad del pan, me gusta el buen pan, y creo que el buen pan, no puede separarse del gl\u00faten, pero bueno, seguir\u00e9 intentando!<\/p>\n<p>Con la pizza realmente me saco el sombrero, si bien, en textura no queda igual que la pizza de harina de trigo, esta receta qued\u00f3 muy bien, muy sabrosa y hasta con bordes crocantes. Mucho m\u00e1s liviana y f\u00e1cil de digerir, pod\u00e9s comerte tranquilamente la pizza entera y no te vas a sentir mal. Igual yo la compart\u00ed con mi marido, que di\u00f3 el visto bueno!<\/p>\n<p>Ac\u00e1 les dejo la receta, la masa es de Jennifer Katzinger, due\u00f1a de una panader\u00eda vegana gluten-free en Seattle <a href=\"https:\/\/www.flyingapron.com\/\" target=\"_blank\">Flying Apron<\/a>.<\/p>\n<p>Ventaja frente a la pizza de harina de trigo: Las masas (tanto de pan, como de pizza) hechas con harinas sin gl\u00faten, no necesitan tiempo de amasado y de fermentaci\u00f3n. Es mejor activar la levadura,\u00a0mezclar los ingredientes, unir la masa, colocar en el molde y meter al horno, porque qu\u00edmicamente debe dejarse que la levadura act\u00fae una vez DENTRO del horno y no fuera. As\u00ed que no ten\u00e9s la excusa de &#8220;no tengo tiempo&#8221; porque esta pizza se prepara rapid\u00edsimo!<\/p>\n<p>A probar!<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\"
