Me encanta hacerlo y me encanta compartirlo. Cuando me hice vegana, una de las cosas con las que ansiaba experimentar, era con el Pan Dulce, pensando cu\u00e1l ser\u00eda la mejor manera de hacerlo vegano. Ayer, finalmente, un domingo de invierno, decid\u00ed poner manos a la obra. Luego de analizar varias recetas y opciones, decid\u00ed &#8220;cruzar&#8221; dos recetas, usando algunas proporciones de una y otros detalles de la otra, claro que estas f\u00f3rmulas eran tradicionales, as\u00ed que el cambio de ingredientes a opciones veganas, va totalmente por mi cuenta, al igual que ciertas atribuciones que me tom\u00e9 con la harina y el az\u00facar. Como para explicar un poco, los ingredientes del Pan Dulce tradicional (no vegano) incluyen huevos, manteca y leche. En el caso de mi versi\u00f3n, reemplac\u00e9 los huevos por pur\u00e9 de manzanas, la manteca por aceite de coco y la leche por leche de almendras. Para la esponja us\u00e9 el 100% de harina de centeno, que otorg\u00f3 a la miga un color y un sabor \u00fanicos. Us\u00e9 az\u00facar rubio sin refinar y finalmente, para el glas\u00e9 de la cobertura, az\u00facar impalpable con jugo de lim\u00f3n y un secretito que va en la receta para que el glas\u00e9 se seque. A mi me gusta el Pan Dulce lleno de frutos secos, no uso otra cosa (salvo algunas pasas) y como ten\u00eda pocas, agregu\u00e9 unos cranberries secos, que los moj\u00e9 en un vino oporto junto con las pasas para que se humedezcan. Los perfumes que uso son siempre los mismos, ralladura de lim\u00f3n y naranja, agua de azahar, extracto de vainilla, extracto de almendras y un poco de canela, esta vez, tambi\u00e9n us\u00e9 un poquit\u00edn de speculoos en polvo (es una mezcla de especias que lleva canela, clavo, nuez moscada, jengibre, cardamomo y pimienta blanca) NO SABEN lo delicioso que es! Bien, ustedes pueden ponerle lo que quieran, hay a quienes les gusta con chips de chocolate o fruta escarchada. Algunas aclaraciones: 1) Si no ten\u00e9s aceite de coco, pod\u00e9s usar margarina vegetal NO HIDROGENADA, por favor. 2) Si no ten\u00e9s harina de centeno para la esponja, pod\u00e9s usar harina integral fina, si no ten\u00e9s harina integral fina, pod\u00e9s usar todo harina blanca. 3) Si no ten\u00e9s leche de almendras, pod\u00e9s usar cualquier otra leche vegetal (de arroz, de avena, de soja) Vamos a la receta! <img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone size-full wp-image-1515\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2014\/12\/pd01.jpg\" alt=\"Vegan Panettone\" width=\"680\" height=\"453\" \/> Primero, el &#8220;Mise en Place&#8221;, como dicen los franceses, &#8220;Las cosas en su lugar&#8221; Tener todo a mano lleva organizaci\u00f3n, pero nada m\u00e1s feo que haber metido las manos en la masa y darte cuenta de que te falt\u00f3 pesar el az\u00facar o rallar el lim\u00f3n. Es muy bueno cuando ten\u00e9s todo a mano ya pesado y organizado! <img decoding=\"async\" class=\"alignnone size-full wp-image-1517\" forma pareja, estirar la masa, colocar los frutos y enrollarla como si fuese un arrollado, despu\u00e9s amas\u00e1s para emparejar, as\u00ed no te quedan pedazos de masa sola ni partes puro fruto.
