Seguimos con las comidas \u00e9tnicas, en este caso, un poco de comida espa\u00f1ola! Hoy les traigo mi receta de paella vegana. Las veces que estuve de viaje por Espa\u00f1a, siempre he querido comer paella, pero no es f\u00e1cil siendo vegan. Hay que tener mucho cuidado de preguntar bien, porque en Espa\u00f1a pareciera que usar carcasas de pescado para hacer el caldo de la paella no la convierte en un plato no apto vegetarianos. Por supuesto que el concepto es que los vegetarianos comen pescado \u00bf?. En fin, en mis recientes vacaciones por Buenos Aires, tambi\u00e9n he pasado por Mar del Plata a visitar a mi padre y si bien, Mar del Plata no queda en Espa\u00f1a, no me pregunten por qu\u00e9 pero una se\u00f1ora vend\u00eda paelleras en la playa. &#8220;Esta es la m\u00eda&#8221; pens\u00e9 y me traje la paellera llena de arena a mi casa en Amsterdam. La cur\u00e9 unt\u00e1ndola con aceite y haci\u00e9ndola calentar hasta que se volvi\u00f3 negra (esto la hace impermeable para que el arroz no se pegue) y me decid\u00ed a probar. <strong>Unos peque\u00f1os conceptos para explicar la paella:<\/strong> Por el contrario del risotto, al arroz de la paella no hay que tocarlo jam\u00e1s! Se echa en la paellera con las verduritas, se cubre con caldo y ah\u00ed se lo deja. Es que la paella debe tener los granos de arroz bien separaditos, no como el risotto que hay que revolverlo como loco para que largue todo su almid\u00f3n y quede cremoso. <strong>El tipo de arroz:<\/strong> Supuestamente se usa el arroz &#8220;bomba&#8221; un arroz de grano corto y gordito que queda con una textura firme despu\u00e9s de la cocci\u00f3n. Bueno, olvidate que lo haya podido conseguir. As\u00ed que us\u00e9 un simple y llano doble carolina y encima integral! Trato de evitar los cereales refinados, as\u00ed que us\u00e9 ese y qued\u00f3 muy bien! De hecho, ni siquiera se nota que es integral porque qued\u00f3 te\u00f1ido de amarillo (por el azafr\u00e1n) <strong>Verduras de base:<\/strong> Us\u00e9 pimiento amarillo y rojo y cebolla morada (ustedes pueden usar lo que quieran) <strong>Vegetales\u00a0de acompa\u00f1amiento:<\/strong> Para reemplazar al marisco de las paellas no vegan, yo us\u00e9 hongos grillados, vegetales y arvejas. Us\u00e9 zucchini, que lo grill\u00e9 previamente y zanahorias que tambi\u00e9n salte\u00e9, tanto a los hongos como al zucchini y la zanahoria los condiment\u00e9 con sal ahumada. <strong>Caldo:<\/strong> Us\u00e9 mi cl\u00e1sico caldo de sopa que me hab\u00eda sobrado de otra preparaci\u00f3n. Pueden usar cualquier caldo vegetal o hacer uno simple usando un puerro, una cebolla y una zanahoria cortaditos, llevados al fuego cubiertos de agua y colar luego de 30 minutos aproximadamente, pueden condimentarlo con miso, laurel o lo que m\u00e1s les guste. <strong>Salsa de tomate:<\/strong> Us\u00e9 tomates perita frescos, pelados y pasados por el mixer. <strong>Azafr\u00e1n:<\/strong> Us\u00e9 en hebras y luego una mezcla de especias para paella que me traje del Mercado de La Boquer\u00eda, la pueden preparar ustedes mismos usando piment\u00f3n, pimienta, c\u00farcuma, laurel, ajo, tomillo y azafr\u00e1n en polvo. Si no ten\u00e9s paellera no hay excusas! Hacelo en una sart\u00e9n antiadherente o en la cacerola que us\u00e1s para hacer guisos, para que no se pegue mantenela siempre cubierta con caldo, hacela a fuego bajo y NO LA TOQUES! No hay que revolver, solo mirarla de lejos y agregar caldo o agua si hace falta. Se hace solita! Us\u00e1 los vegetales que te gusten, ponete creativo! class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Pelar los tomates perita sumergi\u00e9ndolos en agua hirviendo, haciendo previamente un tajito en la piel con un cuchillo, cuando la piel se despegue, escurrir y pelar manualmente, pasar por el mixer, reservar.<\/div><\/li><li id=\"wprm-recipe-3865-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Poner el caldo en una cacerolita y llevar al fuego.<\/div><\/li><li id=\"wprm-recipe-3865-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Mientras tanto llevar la paellera al fuego, colocar un chorrito de aceite de oliva y saltear el ajo, la cebolla y el pimiento.<\/div><\/li><li id=\"wprm-recipe-3865-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Saltear hasta transparentar, incorporar un poco de sal.<\/div><\/li><li id=\"wprm-recipe-3865-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Colocar el arroz y removerlo con cuchara de madera para que no se queme por un par de minutos.<\/div><\/li><li id=\"wprm-recipe-3865-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Incorporar el pur\u00e9 de tomate.<\/div><\/li><li id=\"wprm-recipe-3865-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Cubrir con el caldo, agregar el azafr\u00e1n y las especias junto con las arvejas y dejar cocinar durante 20 minutos (o el tiempo de cocci\u00f3n del arroz utilizado)<\/div><\/li><li id=\"wprm-recipe-3865-step-0-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Mientras el arroz se cocina, en un sart\u00e9n aparte, grillar los hongos.<\/div><\/li><li id=\"wprm-recipe-3865-step-0-10\" class=\"wprm-recipe-instruction\" style=\"list-style-type: los hongos y vegetales grillados, mezclar, esperar unos minutos hasta que tomen temperatura, apagar el fuego, tapar y dejar reposar unos minutos antes de servir.<\/div><\/li><li
