Es una fiesta de sabor y textura!<br \/>\nEl dulce sutil del arroz, lo crujiente de la zanahoria, un delicioso tofu ahumado crocante, la cremosidad de la palta, el frescor del pepino, un buen queso crema vegano, algas nori tostadas, ciboulette, semillas de s\u00e9samo, salsa de soja, chutney de mango&#8230; mmmmmmmm<\/p>\n<p>Pod\u00e9s usar los ingredientes que m\u00e1s te gusten en el sushi, igualmente creo que para que tenga realmente sabor a sushi deben estar presentes las algas nori y el wasabi, bueno, y la salsa de soja.<\/p>\n<p>El \u00fanico trabajo que hay que tomarse es preparar el arroz para sushi, si bien no es dif\u00edcil, requiere atenci\u00f3n completa para quedar bien.<\/p>\n<p>Yo aprend\u00ed las t\u00e9cnicas del sushi de la mano del itamae Iwao Komiyama, all\u00e1 por 2008, cuando, por supuesto, a\u00fan era carnista.<br \/>\nConocer la t\u00e9cnica, me ha llevado a preparar sushi vegano delicioso. No hay mucha oferta de sushi vegano rico, complejo, con opciones calientes, tempuras, empanados, diferentes ingredientes&#8230; Uno puede imaginar que comer sushi vegano se limita a ponerle palta, pepino, zanahoria, pero no es as\u00ed! Yo hago rolls de muzzarella vegana empanada y frita, con tomates secos y albahaca, por dar un ejemplo, otros con tempeh teriyaky rebozados y fritos, otros con tofu ahumado, en fin, preparo variedades de rolls bien interesantes. Pero todo esto lo voy a dejar para futuras entregas porque lleva explicaci\u00f3n de c\u00f3mo armar los rolls, cortar y dem\u00e1s.<\/p>\n<p>Lo que les traigo hoy es algo simple, es, aprender a preparar el arroz de sushi, para poder disfrutar de un bowl en el que solo hay que poner ingredientes cortados, nada m\u00e1s cocinado salvo el tofu ahumado (que tambi\u00e9n se puede poner crudo, yo lo us\u00e9\u00a0crocante, lo salte\u00e9 un poco con aceite, pero es opcional)<br \/>\nEn realidad, todos los ingredientes son opcionales, tienen que ver con los que te gusten a vos. Si no te gusta el tofu, no pon\u00e9s, capaz prefer\u00eds tempeh o seit\u00e1n. Si no te gusta el pepino, no pon\u00e9s, capaz prefer\u00eds tomate y as\u00ed&#8230;<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-2399\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2017\/07\/sushi-bowl02.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/p>\n<p>Volviendo al arroz, en tiendas\u00a0japonesas o en el barrio chino, van a ver que hay un arroz especial para sushi, pueden usar ese, o ir por la opci\u00f3n m\u00e1s econ\u00f3mica y que se consigue en cualquier supermercado que es el arroz Doble Carolina. Traten de comprar uno de buena calidad, y mejor si el envase deja ver el arroz, para que puedan observar si los granos est\u00e1n enteros y no tienen manchitas blancas (esto significa\u00a0que est\u00e1 viejo), otra cosa a tener en cuenta es la fecha de envasado del arroz, para asegurar su frescura.<br \/>\nAl arroz hay que lavarlo varias veces con agua fresca, hasta que el agua salga casi transparente (las primeras veces saldr\u00e1 blanca), una vez lavado el arroz, colocar en una olla de acero inoxidable y usar la misma cantidad de agua que de arroz. Esto es, si usas 2 tazas de arroz, pon\u00e9 2 tazas de agua. Yo siempre agrego un chorrito m\u00e1s por las dudas.<\/p>\n<p>La cantidad para calcular es 125\u00a0gramos de arroz por persona, con este m\u00e9todo de cocci\u00f3n va a haber un desperdicio, que es el arroz que quedar\u00e1 pegado y tostado en el fondo de la olla, esto es porque cocinamos el arroz en el agua justa que necesita para que no sea necesario colarlo y quede esponjoso y pegoteado, pero con el grano a punto. El arroz de sushi se debe unir, pero eso no quiere decir que debe pasarse.<\/p>\n<p>Una vez est\u00e1 el arroz y el agua necesarios en la olla, necesitamos un poco de papel aluminio para sellar la olla antes de poner la tapa y luego, vamos a poner algo pesado encima de la tapa para que no se levante y se pierda el agua o el vapor. Esto es muy importante, porque sino, el arroz va a quedar crudo, adem\u00e1s de quemarse lo que est\u00e1 en el fondo de la olla.<\/p>\n<p>Se coloca la olla, con el sellado de papel aluminio, la tapa y algo pesado por encima (yo pongo un cacharrito dado vuelta y encima otro con agua para que le haga peso) en una hornalla mediana con fuego al m\u00e1ximo. Ac\u00e1 hay que quedarse bien cerquita y prestar atenci\u00f3n, cuando te das cuenta de que el agua est\u00e1 hirviendo, hay que contar 4 minutos y bajar el fuego al m\u00ednimo. En ese momento, hay que poner el timer en 10 minutos y apagar el fuego.<br \/>\nEl arroz que est\u00e1 en el piso de la olla, estar\u00e1 dorado y crocante, no sirve para sushi o este bowl, pero no lo tires! Yo me lo como as\u00ed como queda, mientras voy cocinando.<br \/>\nEl resto del arroz se pasa a un recipiente grande, para aderezarlo y enfriarlo, se va colocando el aderezo de a poco y moviendo y abanicando (con abanico, revista, tapa de taper, cart\u00f3n o lo que sea que sirva para dar viento)<br \/>\nUna vez tibio, se lo tapa con un pa\u00f1o mojado en agua fresca y escurrido (para que no se seque) hasta la hora de comer o de armar los rolls, en caso de hacer sushi.<\/p>\n<p>Bien, creo que esa es toda la explicaci\u00f3n que necesita la cocci\u00f3n del arroz, el aderezo es muy simple, se prepara con vinagre y az\u00facar. El vinagre puede ser de arroz, pero tambi\u00e9n puede ser vinagre de vino blanco com\u00fan y silvestre. Es opcional colocar Mir\u00edn, Sake o alguna bebida blanca (unas gotitas) para dar sabor.<\/p>\n<p>Espero que se animen a probarlo, hacerlo de esta manera es una gran diferencia, si les gusta el sushi los animo a que lo intenten, puede que las primeras veces no salga bien, es cuesti\u00f3n de agarrarle la mano.
