Es lo que queda en la bolsa luego del filtrado. No hay que tirarlo! Se puede aprovechar para hacer infinidad de cosas ricas!<\/p>\n<p>Con el bagazo de la leche de nuez que hicimos los otros d\u00edas, prepar\u00e9 estas cookies sin gluten, ideales para mojar en un vaso de leche (de nuez!)<\/p>\n<p>Us\u00e9 mi harina sin gluten preferida: La harina de trigo sarraceno (o alforf\u00f3n), me encanta, me gusta mucho m\u00e1s que la de arroz integral o cualquier otro cereal, es m\u00e1s barata que las harinas de almendra o coco y queda genial en cookies, muffins y tortas.<\/p>\n<p>Si a\u00fan no la probaron, les recomiendo hacerlo, da muy buenos resultados y es riqu\u00edsima.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-2519\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2017\/08\/cookies-nuez02.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/p>\n<p>Para unir estas 2 harinas que carecen de gluten, us\u00e9 otra sobra o m\u00e1s bien un elemento que se suele descartar. Esto es el <strong>aquafaba<\/strong>. Por si nunca escuchaste hablar de \u00e9l, se trata del l\u00edquido de cocci\u00f3n sobrante de las legumbres. Ya sea que las legumbres las cocines vos o las compres ya cocidas en frasco o en lata, ese &#8220;jugo&#8221; es un excelente reemplazo del huevo (hasta se puede batir y hacer merengue!) si si si. En este caso, el sobrante de unos garbanzos y no se asusten que en este caso no hay que batir nada, simplemente se pone l\u00edquido, como se pondr\u00eda una clara as\u00ed como viene.<\/p>\n<p>Por \u00faltimo, algunos consejitos para realizar estas galletas, ya que me gusta darles opciones:<\/p>\n<ol>\n<li>Si no ten\u00e9s el bagazo de la nuez, pero ten\u00e9s de almendras, macadamias, casta\u00f1as o cualquier otro fruto seco, pod\u00e9s usarlo igual.<\/li>\n<li>Si no ten\u00e9s ning\u00fan bagazo de ninguna leche y quer\u00e9s hacer estas cookies, solo reemplaz\u00e1 la cantidad de bagazo por harina de nuez\/almendras\/macadamias\/casta\u00f1as.<\/li>\n<li>Si no quer\u00e9s usar ning\u00fan fruto seco, pod\u00e9s hacerlas con trigo sarraceno por completo o alguna otra harina sin gluten que te guste usar en galletas.<\/li>\n<li>Si no te interesa hacerlas sin gluten, reemplaz\u00e1 las cantidades de bagazo y trigo sarraceno, por harina de pasteler\u00eda (0000).<\/li>\n<li>Si no ten\u00e9s aceite de coco, pod\u00e9s usar de ma\u00edz, de girasol o cualquier otro aceite neutro.<\/li>\n<\/ol>\n<p>Ahora si, la receta!<\/p>\n<div id=\"recipe\"><\/div><div
