Un delicioso queso similar al queso que en Argentina llamamos &#8220;cremoso&#8221;.<br \/>Es a base de casta\u00f1as de caj\u00fa (tambi\u00e9n puede hacerse con almendras peladas).<br \/>Tiene una textura firme, gracias al uso del agar-agar y tiene la propiedad de fundirse, gracias al uso del almid\u00f3n de mandioca (tambi\u00e9n conocido como f\u00e9cula de mandioca o f\u00e9cula de tapioca)<\/p>\n\n\n\n<p>A este queso lo vamos a &#8220;estacionar&#8221;, no demasiado tiempo, pero si 3 o 4 d\u00edas, vamos a dejarlo que pierda humedad, para que resulte firme y se pueda cortar.<br \/>No us\u00e9 probi\u00f3ticos en este queso, pero si tiene algo de fermentaci\u00f3n, porque us\u00e9 vinagre y miso para su elaboraci\u00f3n.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2017\/08\/queso-cremoso02.jpg\" alt=\"\" class=\"wp-image-2541\"\/><\/figure>\n\n\n\n\n\n\n\n<p>Es importante usar todos los ingredientes para lograr estos resultados, el \u00fanico ingrediente que puede ser opcional es el miso, porque s\u00e9 que no es f\u00e1cil de conseguir y si bien creo que aporta un sabor especial, es posible obviarlo, quiero decir, si lo tienen, obvio \u00fasenlo, si no lo tienen y no lo consiguen, pues no dejen de hacer este queso por este ingrediente.<\/p>\n\n\n\n<p>Tambi\u00e9n es importante contar con una licuadora potente para realizar esta receta para que no queden pedacitos de casta\u00f1as. Ayuda mucho ponerlas en remojo de un d\u00eda para el otro, pero si su licuadora no es muy potente, quiz\u00e1s es preferible hacerlo con una procesadora. Recomiendo mucha paciencia a la hora de licuar o procesar, parar cada tanto, ayudarse con una esp\u00e1tula para bajar lo que queda en los bordes y as\u00ed de a poco, ir logrando una preparaci\u00f3n suave y cremosa sin grumos.<\/p>\n\n\n\n<h1 class=\"wp-block-heading\">Un queso cremoso que funde&#8230;<\/h1>\n\n\n\n<p>Este queso se derrite, va a quedar genial en pizzas, tartas, empanadas, lasagnas y tostados. Pero quiero darles un par de tips para que logren el mejor de los resultados, usen estos mismos tips si hacen este otro <em><strong><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/recipe\/doble-queso\/\" target=\"_blank\" rel=\"noopener noreferrer\">queso<\/a><\/strong><\/em>.<\/p>\n\n\n\n<p>Si vas a usar el queso como relleno de algo, por ejemplo, tartas, empanadas, lasagna, tostados (es decir, el queso queda adentro de algo que se va a exponer al calor) se va a fundir perfectamente, recomiendo cortarlo en rodajas finas o en cubitos peque\u00f1os.<br \/>Este queso tambi\u00e9n queda espectacular en una receta de pastas tipo <em><strong><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/vegan-mac-cheese\/\" target=\"_blank\" rel=\"noopener noreferrer\">Mac&amp;Cheese<\/a><\/strong><\/em> o en una <em><strong><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/recipe\/polenta-con-salsa-bolognesa\/\" target=\"_blank\" rel=\"noopener noreferrer\">polenta con salsa bolognesa<\/a><\/strong><\/em>.<\/p>\n\n\n\n<p>Pero si vas a usarlo para una <em><strong><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/recipe\/vegan-pizza-2\/\" target=\"_blank\" rel=\"noopener noreferrer\">pizza<\/a><\/strong><\/em> o gratinarlo por encima de alguna cosa, es importante esparcirlo bien y darle calor bajo para que derrita. Si cortamos rebanadas demasiado gruesas y lo exponemos a un horno muy fuerte, probablemente se selle antes de derretirse y terminar\u00e1 en pedazos tal cual los pusimos. Recomiendo entonces en estos casos, cortar rebanadas finas, colocar al horno bajo hasta que se ablande un poco, sacarlo del horno y esparcirlo con una esp\u00e1tula, una vez bien repartido, volver al horno fuerte para gratinar.<\/p>\n\n\n\n<p>Esto es porque las prote\u00ednas presentes en las casta\u00f1as o las almendras no reaccionan de la misma forma al calor que las prote\u00ednas de la leche de vaca.<\/p>\n\n\n\n<p>Por \u00faltimo les digo, aunque les parezca raro usar vinagre de cidra de manzana para un queso, por favor, no lo obvien ni lo reemplacen por otro vinagre. Creanme que el sabor a queso que le da a la preparaci\u00f3n es incre\u00edble.<\/p>\n\n\n\n<p>Un tip final! Para dejar estacionar este queso, hay que envolverlo en una tela especial que se usa para hacer quesos, se llama <em>cheese cloth<\/em>, si no tienen, pueden usar la bolsa de filtrar leches y si no tienen eso tampoco, un repasador fino, muy muy limpio que deje pasar el aire servir\u00e1. La idea es que la tela absorba la humedad y a la vez lo proteja de secarse.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" licuadora todos los ingredientes excepto el agua, el agar y la f\u00e9cula (es recomendable colocar primero los l\u00edquidos<\/div><\/li><li id=\"wprm-recipe-3706-step-0-1\" poco. Repetir esta acci\u00f3n tantas veces como sea necesario, ayud\u00e1ndose de una esp\u00e1tula, hasta lograr una mezcla cremosa y sin grumos<\/div><\/li><li id=\"wprm-recipe-3706-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Colocar la mezcla en una cacerola y prender el fuego bajo. Mezclar el agua con la f\u00e9cula e incorporar, mezclar hasta unificar<\/div><\/li><li id=\"wprm-recipe-3706-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Mezclar el agar agar con unas cucharadas de agua y agregar a la cacerola, mezclar hasta combinar. Seguir batiendo con batidor de alambre. No dejar que la preparaci\u00f3n hierva, mantenerla a fuego bien bajo<\/div><\/li><li id=\"wprm-recipe-3706-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">El agar agar necesita cocinarse por 5 minutos a una temperatura de 86\u00baC, seguir batiendo para prevenir grumos<\/div><\/li><li id=\"wprm-recipe-3706-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Una vez que la mezcla est\u00e1 m\u00e1s densa y cuesta mezclar, retirar del fuego<\/div><\/li><li id=\"wprm-recipe-3706-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Colocar la mezcla en un aro met\u00e1lico forrado con el pa\u00f1o (ver detalles en el post m\u00e1s arriba) y dejar que tome temperatura ambiente<\/div><\/li><li id=\"wprm-recipe-3706-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Doblar por encima el pa\u00f1o cubriendo el queso, colocarlo sobre una tabla de bamb\u00fa o madera y llevar a la heladera por 12 horas, darlo vuelta cada 6 horas<\/div><\/li><li id=\"wprm-recipe-3706-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Sacar del molde y continuar dando vuelta el queso cada 6 horas aproximadamente, cubri\u00e9ndolo con el pa\u00f1o y apoy\u00e1ndolo en la tabla, guard\u00e1ndolo en la heladera, repetir este proceso durante 3 d\u00edas<\/div><\/li><li id=\"wprm-recipe-3706-step-0-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">A esta altura ya deber\u00eda tener consistencia de queso cremoso, pero si se desea que quede m\u00e1s firme, se puede seguir con este proceso por 2 d\u00edas m\u00e1s<\/div><\/li><li id=\"wprm-recipe-3706-step-0-10\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Una vez que adquiri\u00f3 la consistencia deseada, envolver en film o guardar en un taper.
