{"id":2549,"date":"2017-09-01T21:36:15","date_gmt":"2017-09-02T00:36:15","guid":{"rendered":"https:\/\/holavegan.theblogpress.com\/?post_type=recipe&#038;p=2549"},"modified":"2026-04-12T18:26:10","modified_gmt":"2026-04-12T21:26:10","slug":"tortitas-negras-carasucias","status":"publish","type":"post","link":"https:\/\/holavegan.com\/en\/tortitas-negras-carasucias\/","title":{"rendered":"Tortitas negras (&#8220;carasucias&#8221;)"},"content":{"rendered":"<p><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone size-full wp-image-5927\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2017\/09\/tortitas-negras-blog.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/p>\n<h5>Tortitas negras veganas?<\/h5>\n<p>Si si si!<br \/>\nNunca fui muy fan\u00e1tica de estas facturas cuando ven\u00edan de la panader\u00eda, pero mi mam\u00e1 hac\u00eda una versi\u00f3n casera que alegraba corazones y quise alegrar el m\u00edo, no porque estuviera triste, pero quise llenarme de sabores de mam\u00e1, quise recrear con mis papilas gustativas aquellas tardes de los a\u00f1os ochenta, cuando volv\u00edamos de la escuela a las 5 y tantas de la tarde y mi madre nos esperaba con facturas caseras reci\u00e9n horneadas para merendar y todo el amor del mundo.<\/p>\n<p>Siempre digo que la comida para mi es amor. Pero no solo eso, los olores de la cocina, los sabores, hacen que pueda viajar en el tiempo y en un abrir y cerrar de ojos me encuentre en otro espacio reviviendo hermosos momentos. Qu\u00e9 poderosos son los sentidos del gusto y el olfato!<\/p>\n<p>Preparar estas tortitas es muy f\u00e1cil, pero hay muchos muchos consejitos que quiero darles para que salgan perfectas. As\u00ed que les pido paciencia y que lean todo el post, para que no se les escape ning\u00fan detalle&#8230;<\/p>\n<p>En realidad, en las panader\u00edas, las tortitas negras o &#8220;carasucias&#8221; se elaboran con recortes de masa sobrantes de pan y otras facturas. Es un &#8220;menjunje&#8221; de diferentes masas que pueden llevar grasa, manteca, leche, agua, huevos o no, por eso en general, la masa es un poco secota y sin mucha gracia.<\/p>\n<p>Como las vamos a hacer caseras, vamos a preparar la masa desde cero, les cuento que es muy f\u00e1cil. Son pocos ingredientes y muy sencillos.<br \/>\nComo materia grasa yo us\u00e9 aceite de coco, pero si no tienen pueden reemplazar por margarina o mismo por aceite de girasol o ma\u00edz. Tambi\u00e9n pueden no ponerle materia grasa si as\u00ed lo desean, quiz\u00e1s no quede tan suave la masa, pero ser\u00e1n m\u00e1s saludables.<\/p>\n<p>La leche que us\u00e9 es la de <strong><em><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/recipe\/leche-de-arroz\/\" target=\"_blank\" rel=\"noopener noreferrer\">arroz<\/a><\/em><\/strong>, pero sirve cualquier <strong><em><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/category\/leches\/\" target=\"_blank\" rel=\"noopener noreferrer\">Plant-based milk<\/a><\/em><\/strong> que tengan en casa, por supuesto.<\/p>\n<h5>Ahora si, vamos con los tips:<\/h5>\n<p>La idea es que las tortitas queden bien pegadas las unas a las otras para que no tengan borde, sino que la masa quede toda esponjosa alrededor. Para lograr esto hay que acomodarlas una al lado de la otra sin dejar espacios en la placa para horno. Crecer\u00e1n antes de ir al horno y crecer\u00e1n en el horno, se &#8220;pegar\u00e1n&#8221; y cuando est\u00e9n listas habr\u00e1 que separarlas. Por eso las tortitas negras no son perfectamente redondas, son un poco deformes, es por esta cercan\u00eda entre ellas.<\/p>\n<p>El az\u00facar negro, no hay que ponerlo as\u00ed como viene del paquete. Notar\u00e1n que el az\u00facar negro viene como h\u00famedo. Si lo us\u00e1ramos as\u00ed se caramelizar\u00eda en el horno y ese no es el objetivo, porque sino quedar\u00eda un caramelo por encima de la masa y lo que buscamos es que quede az\u00facar desgranado. Para lograr esto, se debe mezclar el az\u00facar negro con harina. Yo las llev\u00e9 m\u00e1s all\u00e1 y a esta mezcla le agregu\u00e9 canela y vainilla. Unas tortitas negras sofisticadas, vi\u00f3?<\/p>\n<p>Est\u00e1 bueno que las tortitas negras sean altas, bien gorditas. Al estirar la masa, es importante no hacerlo demasiado fino. Tengamos en cuenta que crecer\u00e1n, pero recomiendo no estirar la masa m\u00e1s fina que 1 cm. El cortapastas que us\u00e9 es de 6 cm. pueden hacerlas un poco m\u00e1s grandes o un poco m\u00e1s chicas.<\/p>\n<p>Aunque peguemos una tortita al lado de la otra, van a quedar algunos huecos en la placa, porque son redondas, es recomendable llenar esos huecos con harina. Si, harina, as\u00ed sin m\u00e1s. esto es para que no caiga az\u00facar en ese hueco, se haga caramelo con el calor y termine siendo todo un pegote imposible de separar. Esta harina es para proteger y procurar que las tortitas se puedan separar bien.<br \/>\nEsto explica por qu\u00e9 cuando compramos tortitas negras, tienen un poco de harina en alg\u00fan lugar.<\/p>\n<p>Antes de poner el az\u00facar por encima, vamos a retirar la harina sobrante de la superficie (con un pincel) y vamos a humedecer con agua, para que el az\u00facar se pegue bien. Puede ser con pincel, con el dedo o con un vaporizador de agua.<br \/>\nEl az\u00facar lo vamos a esparcir por toda superficie de masa en general, no en cada una de las tortitas, esto har\u00e1 que toda la parte superior de cada tortita tenga az\u00facar. No se preocupen si se les cae az\u00facar en los huequitos, recordemos que hab\u00edamos puesto harina y esto impedir\u00e1 que se haga caramelo pegote.<\/p>\n<p>Con respecto al horno, debe estar moderado, esto es unos 180 grados cent\u00edgrados, debe estar precalentado, por lo menos durante media hora antes de hornear las tortitas, idealmente, una hora.<br \/>\nEn cuanto a los tiempos de cocci\u00f3n, van a variar dependiendo del horno, las m\u00edas tardaron 20 minutos, pero yo tengo un horno el\u00e9ctrico y no es tan potente como uno a gas, rev\u00edsenlas a los 10 minutos y comprueben si est\u00e1n cocidas. Deben quedar tiernas, esponjosas y la masa m\u00e1s blanca que dorada.<\/p>\n<p>Ahora si! Creo que ya les pas\u00e9 todos los tips. Revisar cuando hayan pasado 10 minutos, deben quedar blanquitas, no doradas<\/div><\/li><li id=\"wprm-recipe-3703-step-2-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Dejar enfriar y servir.
