All\u00e1 tuve la dicha de comer un alfajor casi todos los d\u00edas, es que, de repente me hice adicta a los alfajores. Estos siempre me parecieron una golosina deliciosa, pero desde que soy vegana los hab\u00eda dejado un poco en el olvido.<br \/>\nEn este viaje los redescubr\u00ed y am\u00e9.<br \/>\nEmpec\u00e9 comiendo los de &#8220;Un Rinc\u00f3n Vegano&#8221; y culmin\u00e9 probando y necesitando a diario los de <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/recipe\/el-veganizador\/\" target=\"_blank\" rel=\"noopener noreferrer\">Lolo Generoso de NatGen<\/a>, mi hermana <a href=\"https:\/\/twitter.com\/maruvegana\" target=\"_blank\" rel=\"noopener noreferrer\">Maru<\/a>, me trajo varios con la intenci\u00f3n de que me los llevara conmigo a los Pa\u00edses Bajos, pero ninguno qued\u00f3, el d\u00eda anterior a volar, llam\u00e9 al local de NatGen en Villa Crespo, para ver si ten\u00edan alfajores y ya no hab\u00eda [al borde del llanto] cort\u00e9 el tel\u00e9fono y guard\u00e9 el \u00faltimo que ten\u00eda en mi haber para el viaje en avi\u00f3n.<\/p>\n<p>Una vez en casa, necesitaba mi alfajor de cada d\u00eda casi como el aire y le dije a mi marido que me iba a embarcar en la empresa de hacerlos, porque as\u00ed no pod\u00eda seguir viviendo. Lo primero que pens\u00e9, fue en el dulce de leche, yo hab\u00eda creado con \u00e9xito, el <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/recipe\/vegan-dulce-de-leche\/\" target=\"_blank\" rel=\"noopener noreferrer\">dulce de leche de coco<\/a>, hab\u00eda intentado sin \u00e9xito el de leche de avena, el de leche de coco casera y alguno que otro, pero nunca hab\u00eda probado hacer el de leche de almendras. Entonces, como ten\u00eda almendras en casa, decid\u00ed que ya era tiempo de probar.<\/p>\n<p>Luego de 3 diferentes intentos, logr\u00e9 un dulce de leche con una consistencia apta para rellenar alfajores, debo decirles que prob\u00e9 DE TODO, primero, almid\u00f3n de tapioca, segundo, agar agar, tambi\u00e9n harina de coco para que el dulce de leche quedara similar al repostero. Todas estas pruebas fueron un desastre. Finalmente, agregu\u00e9 al dulce de leche f\u00e9cula de ma\u00edz y result\u00f3!<\/p>\n<h5>Aqu\u00ed, el dulce de leche de almendras (repostero)<\/h5>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-2641\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2017\/12\/alfajores02.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/p>\n<p>Supuestamente el dulce de leche repostero lleva m\u00e1s az\u00facar que el tradicional, el tema es que para mi gusto es demasiado dulce. Las t\u00edpicas recetas que indican 1 kg. de az\u00facar por litro de leche me parecen una locura. Mi proporci\u00f3n es 250 grs. de az\u00facar por litro de leche, para m\u00ed esto es suficiente, tengan en cuenta que se reduce much\u00edsimo!<br \/>\nYo us\u00e9 az\u00facar de coco, tiene un delicioso sabor a caramelo y un color espectacular. Si no consiguen les recomiendo usar az\u00facar rubio, org\u00e1nico.<br \/>\nNo recomiendo az\u00facar blanco refinado, porque les va a quedar m\u00e1s palid\u00f3n (adem\u00e1s no es buena su calidad), tampoco recomiendo mascabo, porque su sabor es muy invasivo.<\/p>\n<p>La leche que us\u00e9 es como ya les dije, de almendras, casera, una taza de almendras activadas por un litro de agua filtrada, listo.<br \/>\nUs\u00e9 vainilla natural, mucho m\u00e1s rica que la esencia.<\/p>\n<p>Eso es todo!<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-2642\" de comer alfajor!<\/h5>\n<p>Finalmente las tapas, son muy f\u00e1ciles de hacer y la cobertura tambi\u00e9n, ac\u00e1 el desaf\u00edo es hacer el dulce de leche, aunque espero que mi experiencia los decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Colocar las almendras en la licuadora con medio litro de agua filtrada, licuar por 1 minuto<\/div><\/li><li id=\"wprm-recipe-3661-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Agregar el resto del agua y licuar por otro minuto<\/div><\/li><li id=\"wprm-recipe-3661-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Filtrar con bolsa para leches<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Para el dulce de leche<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-3661-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Colocar la leche (reservando un poco en una taza) en una cacerola junto con la chaucha de vainilla, llevar a fuego hasta que hierva<\/div><\/li><li id=\"wprm-recipe-3661-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Bajar el fuego y agregar el az\u00facar, revolver hasta integrar<\/div><\/li><li id=\"wprm-recipe-3661-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Dejar el fuego bajo y revolver cada tanto (15 o 20 minutos) chequeando que el dulce no se pegue en el fondo de la cacerola<\/div><\/li><li id=\"wprm-recipe-3661-step-1-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Al cabo de 2 horas, mezclar la f\u00e9cula en el poco de leche fr\u00eda reservada en la taza y agregar a la cacerola revolviendo continuamente para que no se formen grumos<\/div><\/li><li id=\"wprm-recipe-3661-step-1-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Seguir cocinando y revolviendo constantemente a fuego m\u00ednimo por 15 o 20 minutos m\u00e1s<\/div><\/li><li id=\"wprm-recipe-3661-step-1-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">El dulce debe despegarse de los bordes de la cacerola, la consistencia en caliente es m\u00e1s l\u00edquida que cuando enfr\u00eda, para testear la consistencia en fr\u00edo, colocar una cucharada del dulce sobre un platito, esparcir y dejar que se enfr\u00ede, si al pasar el dedo por el medio queda marcado, es decir, se abre un \"caminito\" el punto ya est\u00e1, si a\u00fan no se separa, seguir reduciendo unos minutos m\u00e1s y volver a probar<\/div><\/li><li id=\"wprm-recipe-3661-step-1-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Dejar enfriar el dulce a temperatura ambiente y luego guardar en frascos en la heladera<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Para las tapas<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-3661-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">En un bol batir el aceite de coco, el az\u00facar y el agave<\/div><\/li><li
