Yooooooooooooooooooooooo!<\/p>\n<p>Esta mousse que hoy les traigo es incre\u00edbleeeeeeee! La textura perfecta de la mousse bien esponjosa y sedosa es posible sin huevos, sin manteca y sin crema!<br \/>\nY cual es el m\u00e1gico ingrediente que logra estas burbujas de aire de manera sublime? Si, si se\u00f1ores, de vuelta, con ustedes&#8230;<\/p>\n<h5>La aquafaba!<\/h5>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-2835\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/03\/mousse-de-chocolate02.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/p>\n<p>Como en mi post de los <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/recipe\/vegan-merengues\/\" target=\"_blank\" rel=\"noopener noreferrer\">merengues<\/a>, les cuento que la mejor manera de lograr un buen montado de las &#8220;claras&#8221; es reduciendo la aquafaba, de esta manera se concentra todo su poder y en pocos minutos con una batidora el\u00e9ctrica de mano comunacha (yo tengo la m\u00e1s trucha que te pod\u00e9s imaginar) logr\u00e1s un merengue que forma picos, blanco, sedoso y espectacular.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-2836\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/03\/mousse-de-chocolate03.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/p>\n<p>Aclaro lo de la batidora porque yo pensaba que el merengue de aquafaba solo sal\u00eda con una KitchenAid (o similar), pero no! Ya van varias veces que preparo el merengue de esta manera (para macarons &#8211; aun no me salen bien, cuando me salgan obvio que subir\u00e9 la receta &#8211; para merengues horneados, para lemon pie, para esta mousse) y siempre sale perfecto.<\/p>\n<p>Un tip a tener en cuenta, en el caso de que no les estuviera quedando con la textura deseada es agregar una cucharadita de goma xantan en polvo en el momento en el que estamos batiendo. Como no es un ingrediente que todos tengamos en nuestra casa, la realidad es que est\u00e1 muy bueno usarlo si queremos hacer con el merengue una cobertura de torta, por ejemplo. Porque lo que logra este ingrediente es que el merengue no se baje en absoluto y se mantenga intacto, con el correr de los d\u00edas.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2837\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/03\/mousse-de-chocolate04.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/p>\n<h5>Mir\u00e1 esta texturaaaaaaaaaaaaaaaa<\/h5>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2838\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/03\/mousse-de-chocolate05.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/p>\n<p>Respecto a la cantidad de dulzor y chocolatosidad: Yo soy fan del chocolate amargo, con lo cual le pongo muy poco az\u00facar y mucho chocolate. Pero tambi\u00e9n he hecho versiones m\u00e1s suaves, con menos chocolate y un poco m\u00e1s de az\u00facar. Depende de tus gustos, en la receta aclaro qu\u00e9 cantidades poner para que salga bien.<\/p>\n<p>Obvio que pod\u00e9s usarlo para rellenar tortas, alfajores, comerlo as\u00ed solo o acompa\u00f1ado
