Cuando despegamos del nido materno, nuestro pap\u00e1 nos regal\u00f3 a las tres un moldecito para hacer sorrentinos, como para que no perdi\u00e9ramos la costumbre de comer pastas caseras, supongo, o tal vez tratando de incentivarnos a que sigui\u00e9ramos la tradici\u00f3n o simplemente para que nos enamor\u00e1ramos -como \u00e9l- del arte de amasar.<\/p>\n<p>Confieso que al principio qued\u00f3 guardado en un caj\u00f3n. Yo viv\u00eda sola y pensaba -como muchos que viven solos- que cocinar s\u00f3lo para m\u00ed era una p\u00e9rdida de tiempo. Hasta que un buen d\u00eda, ya cansada de vivir a ensalada y milanesa de soja (pese a que no era vegana, ni vegetariana por aqu\u00e9l entonces, al menos no conscientemente) decid\u00ed que si no me cocinaba yo, nadie lo har\u00eda por m\u00ed. Desempolv\u00e9 el moldecito de sorrentinos y me dispuse a amasar.<\/p>\n<p><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/05\/sorentinos06.jpg\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-5903\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/05\/sorentinos06.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/a><\/p>\n<h5>MASA SIN HUEVO<\/h5>\n<p>Mi primera masa, claro, fue a base de huevo. As\u00ed que cuando me hice vegana, olvid\u00e9 las pastas caseras por un tiempo, por no saber con qu\u00e9 reemplazarlo. A prop\u00f3sito <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/como-reemplazar-el-huevo\/\">ac\u00e1<\/a> hay un art\u00edculo que indica varios reemplazos, pero ninguno me convenc\u00eda para las pastas. Mi primer intento fue con semillas de ch\u00eda remojadas, pero quedaban llenos de puntitos negros (de las semillas) y me daba que no cualquiera se animar\u00eda a probarlos. Despu\u00e9s de mucha prueba y error, llegu\u00e9 a la conclusi\u00f3n que la mejor receta es la que hoy les traigo.<\/p>\n<p>El huevo lo reemplazo por un chorrito de aceite para que la masa tenga un poco de elasticidad; a\u00f1ado una cucharita de c\u00farcuma para que le de un tono m\u00e1s v\u00edvido a la masa (la harina tiende a ponerse medio gris si no) y en vez de sal marina le pongo kala namak (una sal negra que le da aroma a huevo).<\/p>\n<p><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/05\/sorentinos02.jpg\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-5905\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/05\/sorentinos02.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/a><\/p>\n<h5>EL RELLENO<\/h5>\n<p>Para el relleno simplemente corto un zapallo anco a la mitad y lo cocino en asadera con un chorrito de aceite de oliva, sal, pimienta y un ajo partido. En horno bien bajito. Queda hecho pur\u00e9 (hay que sacar la c\u00e1scara, obviamente) y eso lo mezclo con un poco de queso vegano (puede ser <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/recipe\/doble-queso\/\">este de caj\u00fa<\/a>) \u00a1y listo!<\/p>\n<p>Importante: yo trato de hacer el relleno la noche anterior, as\u00ed no est\u00e1 caliente en el momento de emplearlo.<\/p>\n<p><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/05\/sorentinos05.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5904\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/05\/sorentinos05.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/a><\/p>\n<h5>LA MASA<\/h5>\n<p>La masa se estira bien fina para que los sorrentinos queden livianos, pero no tanto como para evitar que se humedezca con el relleno y se rompa.<\/p>\n<p>Para amasar siempre uso semol\u00edn porque permite maniobrar la masa sin adherir harina y correr el riesgo que se haga pesada. Si no tienen, pueden reemplazarlo por polenta.<\/p>\n<p>Como salsa para acompa\u00f1arlos hasta un rico aceite de oliva le queda bien, pero pueden ir por un cl\u00e1sico <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/fideos-con-tuco\/\">tuco<\/a>\u00a0o un contundente <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/pasta-al-pesto-vegan\/\">pesto<\/a>!<\/p>\n<p>\u00a1Ac\u00e1 va la receta!<\/p>\n<div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-3582\" En paralelo hay que ir amasando de afuera hacia adentro y agregando agua hasta formar una masa con la humedad justa, es decir, que no se pegotee en las manos.<\/div><\/li><li id=\"wprm-recipe-3582-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Una vez formada la masa, dividir en dos y estirar con palo de amasar hasta que quede fina. Usar el semol\u00edn para que no se pegotee.<\/div><\/li><li id=\"wprm-recipe-3582-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">El molde de sorrentinos que yo tengo tiene espacio para 8 unidades, la masa alcanza para usarlo entre 3 y 4 veces. Importante: lo que sobra no se puede volver a amasar, porque es una masa muy dura, as\u00ed que hay que calcular bien la forma de estirar la masa.<\/div><\/li><li id=\"wprm-recipe-3582-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Si no ten\u00e9s molde, pod\u00e9s usar un vasito para cortar los sorrentinos. Eso s\u00ed, asegurate de presionar bien los bordes para que no se abran.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Para el relleno:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-3582-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Cortar el zapallo anco a la mitad, quitarle las semillas y disponerlo sobre asadera con aceite de oliva, un ajo partido, sal y pimienta.<\/div><\/li><li id=\"wprm-recipe-3582-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Llevarlo a horno bien bajito para que se cocine lentamente y quede hecho un pur\u00e9.<\/div><\/li><li id=\"wprm-recipe-3582-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Desechar la c\u00e1scara y pisar bien la pulpa de zapallo formando un pur\u00e9.
