{"id":2914,"date":"2018-05-30T00:01:08","date_gmt":"2018-05-29T22:01:08","guid":{"rendered":"https:\/\/holavegan.theblogpress.com\/?post_type=recipe&#038;p=2914"},"modified":"2026-04-12T18:19:28","modified_gmt":"2026-04-12T21:19:28","slug":"polvorones","status":"publish","type":"post","link":"https:\/\/holavegan.com\/en\/polvorones\/","title":{"rendered":"Polvorones"},"content":{"rendered":"<p><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone size-full wp-image-2915\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/05\/polvorones01.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/p>\n<p>Los otros d\u00edas estaba charlando con mi amiga Andrea, ella siempre me da ideas para cocinar cosas ricas y probar su versi\u00f3n vegana.<br \/>\nDe repente vinieron a la memoria los polvorones, estas galletas crujientes y arenosas que vienen de tradici\u00f3n espa\u00f1ola, pero que en Argentina se preparan muy diferentes a los originales de la madre patria.<\/p>\n<p>Haciendo mi t\u00edpica investigaci\u00f3n de mercado, descubr\u00ed que en Espa\u00f1a se preparan con almendras y manteca de cerdo (snif) y en Argentina, se preparan con harina de trigo y bicarbonato de amonio (es lo que les da el craquelado por encima), adem\u00e1s es t\u00edpico hacerlos marmolados (de vainilla y chocolate)<\/p>\n<p>No me decid\u00eda por una de las dos versiones (tan diferentes entre s\u00ed) as\u00ed que opt\u00e9 por hacer una propia, fusionando ambas.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-2916\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/05\/polvorones02.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/p>\n<h5>Y c\u00f3mo los hice?<\/h5>\n<p>De la versi\u00f3n espa\u00f1ola saqu\u00e9 el uso de almendras y otro tip importante, para que queden arenosos, cocinar la harina antes de emplearla en la preparaci\u00f3n.<br \/>\nEn reemplazo de la manteca o grasa, us\u00e9 aceite de coco.<br \/>\nDe la versi\u00f3n argentina, saqu\u00e9 el marmolado y tambi\u00e9n agregu\u00e9 bicarbonato, pero de sodio, no de amonio (por eso mis polvorones no est\u00e1n craquelados)<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-2917\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/05\/polvorones03.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/p>\n<h5>Se hacen POLVO!<\/h5>\n<p>El nombre Polvor\u00f3n se debe a que cuando lo com\u00e9s, se deshace en polvo. La textura es muy crujiente, pero muy fr\u00e1gil, se rompen de nada.<br \/>\nYo los hice finos, no como en la versi\u00f3n espa\u00f1ola que son m\u00e1s gorditos. Pueden probar diferentes grosores.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2918\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/05\/polvorones04.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><br \/>\nCuando los prob\u00e9, mi paladar recibi\u00f3 lo que en mi memoria era comer un polvor\u00f3n, no recuerdo ni cu\u00e1ndo hab\u00eda sido la \u00faltima vez que com\u00ed este dulce, pero probablemente fue cuando a\u00fan era ni\u00f1a.<br \/>\nEspero que se animen a probarlos, lo \u00fanico un poco trabajoso es el estirado de la masa, porque es una masa arenosa. Por eso recomiendo estirar la masa entre dos papeles manteca o film y luego cortar.<\/p>\n<p>Que los disfruten!<\/p>\n<div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-3579\" class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Preparar un papel film o papel manteca e ir alternando pedazos de masa de cada sabor (vainilla y chocolate) hasta formar un
