{"id":3065,"date":"2018-09-18T00:42:49","date_gmt":"2018-09-18T03:42:49","guid":{"rendered":"https:\/\/holavegan.theblogpress.com\/?post_type=recipe&#038;p=3065"},"modified":"2026-04-12T18:34:20","modified_gmt":"2026-04-12T21:34:20","slug":"milanesas-de-soja-reloaded","status":"publish","type":"post","link":"https:\/\/holavegan.com\/en\/milanesas-de-soja-reloaded\/","title":{"rendered":"Milanesas de soja reloaded"},"content":{"rendered":"<p><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/09\/milanesas-soja02.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-full wp-image-3066\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/09\/milanesas-soja02.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/a><\/p>\n<p>Ya tenemos una versi\u00f3n de las <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/recipe\/milanesas-de-soja\/\">milanesas de soja<\/a> que le ganan por goleada a cualquier milanesa de soja comprada.\u00a0 Pero esas milanesas, no resuelven una necesidad que esta versi\u00f3n recargada s\u00ed: darle un uso al bagazo de la <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/recipe\/leche-de-soja\/\">leche de soja<\/a>.<\/p>\n<p>La primera versi\u00f3n de estas milangas se hac\u00eda con harina de soja, \u00e9sta, en cambio, se hace con el resultado de la extrusi\u00f3n de la leche de soja casera. Es sabido que, de tooodos los sobrantes de leches vegetales, el de soja es uno de los m\u00e1s volum\u00e9tricos. Es que para hacer apenas un litro de leche de soja se usa una taza de portos crudos que, obviamente, despu\u00e9s del remojo duplica o triplica su tama\u00f1o.<\/p>\n<p><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/09\/milanesas-soja01.jpg\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-3068\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/09\/milanesas-soja01.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/a><\/p>\n<p>Tirar comida nunca -y menos a\u00fan en los tiempos que corren- es una opci\u00f3n. Por eso, despu\u00e9s de confeccionar varios litros de leche de soja (que luego us\u00e9 para hacer tofu, ya que estoy, les adelanto) me propuse hacer algo \u00fatil con el bol tama\u00f1o industrial de residuo que me hab\u00eda quedado.<\/p>\n<p>Les paso algunos tips para que el resultado sea siempre positivo:<\/p>\n<ol>\n<li>Conviene volver a cocinar el bagazo para que no resulte indigesto. Simplemente se coloca el bagazo obtenido de la leche en una cacerola con agua, se cocina por 15 minutos y se vuelve a colar.<\/li>\n<li>La soja es bastante desabrida, pero tiene la maravillosa capacidad de absorber muy bien los condimentos que le agreguemos, por lo que mi recomendaci\u00f3n es -como m\u00ednimo- ponerle ajo y perejil picado (frescos) y una cucharada generosa de mostaza de Dijon.<\/li>\n<li>El bagazo suele ser bastante seco, as\u00ed que para poder ligarlo tuve que agregarle un poco de l\u00edquido. En mi caso us\u00e9 leche de soja, pero puede ser agua.<\/li>\n<li>Para ligar la masa us\u00e9 harina de trigo y avena molida. Obviamente pueden hacer una versi\u00f3n sin TACC si lo prefirieran o necesitaran.<\/li>\n<li>Para armar las milanesas lo ideal es tener un recipiente con agua al alcance, para ir humedeci\u00e9ndose las manos.<\/li>\n<li>Este paso recomiendo no saltearlo: despu\u00e9s de formar las milanesas y antes de pasarlas por pan rallado, formar un menjunje con un poco de leche, sal y pimienta, un poquito m\u00e1s de mostaza y un par de cucharadas de harina (puede ser de trigo, de garbanzos o una mezcla de ambas).<\/li>\n<li>Las cocin\u00e9 en el horno, pero con bastante aceite para que no queden secas al mejor estilo suela de zapatos.<\/li>\n<li>Recomiendo fuerte consumirlas en compa\u00f1\u00eda de un rico pur\u00e9 de papas, <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/recipe\/papas-fritas-sin-aceite\/\">papas fritas<\/a>, ensalada o hecho sandwichito con un se\u00f1or pan de campo con masa madre (como el que ven en la foto) o este de <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/recipe\/pan-de-germen-de-trigo\/\">germen de trigo<\/a>.<\/li>\n<\/ol>\n<p><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2018\/09\/milanesas-soja03.jpg\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-3067\"
