{"id":3251,"date":"2019-05-21T18:24:22","date_gmt":"2019-05-21T21:24:22","guid":{"rendered":"https:\/\/holavegan.theblogpress.com\/?post_type=recipe&#038;p=3251"},"modified":"2026-04-12T18:19:23","modified_gmt":"2026-04-12T21:19:23","slug":"palmeritas-integrales","status":"publish","type":"post","link":"https:\/\/holavegan.com\/en\/palmeritas-integrales\/","title":{"rendered":"Palmeritas integrales"},"content":{"rendered":"<p><img fetchpriority=\"high\" decoding=\"async\" class=\"size-full wp-image-3252 alignnone\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2019\/05\/palmeritas-1.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/p>\n<p>Se acuerdan de nuestros cl\u00e1sicos <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/recipe\/bizcochitos-y-cuernitos\/\" target=\"_blank\" rel=\"noopener noreferrer\">cuernitos<\/a>?<br \/>\nSon famosos, salieron en revistas y tambi\u00e9n est\u00e1n en <a href=\"https:\/\/tienda.holavegan.com\/libro\/\" target=\"_blank\" rel=\"noopener noreferrer\">nuestro libro<\/a>.<\/p>\n<p>Hace poco les cambiamos la forma por unos <a href=\"https:\/\/www.instagram.com\/p\/Bw2bO4uF3XF\/?utm_source=ig_web_copy_link\" target=\"_blank\" rel=\"noopener noreferrer\">libritos<\/a>, si si, con la misma masa (o una peque\u00f1a variaci\u00f3n), tambi\u00e9n se pueden hacer en forma de bizcochitos, que quedan m\u00e1s inflados, no tan consistentes como <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/recipe\/bizcochitos-no-grasa\/\" target=\"_blank\" rel=\"noopener noreferrer\">\u00e9stos<\/a>, pero igualmente deliciosos.<\/p>\n<p>Pues bien, hace un par de semanas, mientras est\u00e1bamos de vacaciones (yo en vacaciones horneo mucho mucho) me antoj\u00e9 de los cuernitos, pero no ten\u00eda suficiente harina com\u00fan, decid\u00ed mezclar la harina com\u00fan con harina leudante y el resultado me maravill\u00f3: Los cuernitos salieron s\u00faper livianos, crujientes por fuera y con una miga extra-esponjosa de otro planeta.<\/p>\n<p>Wow, pens\u00e9, esto es lo genial de la cocina, a veces hac\u00e9s mezclas locas y salen muy mal, pero otras, salen tan bien que decid\u00eds seguir aplicando el cambio.<\/p>\n<p>As\u00ed es como despu\u00e9s de esta experiencia, decid\u00ed emplear esta misma masa para hacer palmeritas. Siempre hab\u00eda hecho palmeritas con masa de hojaldre comprada, me gustaba el resultado, pero no quedaban exactamente como me gustan a m\u00ed, yo las prefiero gorditas, livianas, esponjosas, pero con corteza crujiente y azucarada.<\/p>\n<p>Pues he dado con la f\u00f3rmula!<\/p>\n<p><img decoding=\"async\" class=\"size-full wp-image-3253 alignnone\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2019\/05\/palmeritas-2.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/p>\n<p>Son livianas, pues la masa lleva tanto levadura como polvo de hornear. Son crujientes, porque se cocinan en horno moderado para que se sequen por fuera, pero en su interior queden tiernas. Son agri-dulces, porque la masa lleva sal, pero luego llevan az\u00facar en su armado. Son, en mi opini\u00f3n el acompa\u00f1amiento ideal de unos buenos amargos.<\/p>\n<h5>Vamos a ver qu\u00e9 variaciones podemos hacer respecto a los ingredientes<\/h5>\n<p><strong>HARINA Y LEVADURAS<\/strong><\/p>\n<p>La idea es hacer combinar harinas con levadura y polvo leudante, con lo cual se puede usar mezcla de:<\/p>\n<ul>\n<li>Harina com\u00fan + harina leudante + levadura (seca o fresca).<\/li>\n<li>Harina integral + harina leudante + levadura (seca o fresca).<\/li>\n<li>Harina com\u00fan\/integral + polvo de hornear + levadura (seca o fresca).<\/li>\n<\/ul>\n<p>NOTAS:<br \/>\nSi us\u00e1s polvo de hornear, la cantidad es 2,5 cditas.<br \/>\nLa cantidad de levadura fresca es 10 grs.<br \/>\nLa cantidad de levadura seca es 3 grs.<br \/>\nNo recomiendo hacerlas 100% integrales porque la masa queda demasiado pesada. Usando la mitad de harina integral ya estamos incorporando fibra.<\/p>\n<p><strong>GRASAS<\/strong><\/p>\n<p>En la receta original usamos margarina, pero sabemos que muchos no la consumen y buscan alternativas un poco m\u00e1s saludables, con lo cual se puede usar:<\/p>\n<ul>\n<li>Margarina vegetal.<\/li>\n<li>Aceite de coco.<\/li>\n<li>Aceite de oliva.<\/li>\n<li>Aceite neutro (girasol, ma\u00edz).<\/li>\n<\/ul>\n<p>Para el az\u00facar no pongo reemplazantes, pueden usar az\u00facar rubio, mascabo o blanco, pero es necesario usar az\u00facar para lograr el efecto de las palmeras.<\/p>\n<p>Sin m\u00e1s pre\u00e1mbulos, vamos a la receta!<\/p>\n<p><img decoding=\"async\" class=\"size-full wp-image-3254 alignnone\" mezclar las harinas, la levadura desmenuzada (o seca) y la sal.<\/div><\/li><li id=\"wprm-recipe-3498-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Colocar la margarina y hacer un arenado, si se reemplaza por aceite de coco, usar el mismo procedimiento utilizando el aceite en estado s\u00f3lido.
