Ahora les dejo unos tips.<\/p>\n<h5>Gluten<\/h5>\n<p>Deben emplear gluten puro y de buena calidad, de otra manera la textura no quedar\u00e1 igual. El gluten puro es de color gris\u00e1ceo y MUY poderoso, realmente es como un &#8220;pegamento&#8221; y forma una malla en la masa.<\/p>\n<h5>T\u00e9cnica<\/h5>\n<p>Amasar bien la masa para desarrollar el gluten y plegarla varias veces sobre s\u00ed misma, es lo que dar\u00e1 como resultado el deshilachado, no dejen de hacerlo.<\/p>\n<h5>Cocci\u00f3n<\/h5>\n<p>Hemos probado cocer esta preparaci\u00f3n sumergida, no da el mismo resultado. Es important\u00edsimo cocinarla al vapor y con el m\u00e9todo de doble papel (papel manteca y papel aluminio por encima)<\/p>\n<h5>Reposo<\/h5>\n<p>Es importante dejarlo en reposo (en el envoltorio) durante toda la noche en la heladera, esto har\u00e1 que la textura quede como lo esperamos.<\/p>\n<h5>Saz\u00f3n<\/h5>\n<p>Ac\u00e1 pueden usar lo que m\u00e1s les guste, pero es importante ponerle
