{"id":5778,"date":"2020-06-20T18:16:22","date_gmt":"2020-06-20T21:16:22","guid":{"rendered":"https:\/\/holavegan.com\/?p=5778"},"modified":"2026-04-13T06:16:11","modified_gmt":"2026-04-13T09:16:11","slug":"muzza-de-mani","status":"publish","type":"post","link":"https:\/\/holavegan.com\/en\/muzza-de-mani\/","title":{"rendered":"Muzza de man\u00ed"},"content":{"rendered":"<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large is-resized\"><img decoding=\"async\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/06\/muza-de-mani%CC%81.jpg\" alt=\"\" class=\"wp-image-5780\" style=\"width:680px;height:900px\"\/><\/figure>\n<\/div>\n\n\n<p>Sin dudas, una de las versiones de muzza que m\u00e1s \u00e9xito tiene, por su textura moooooooooooooy similar a la especista, por su valor nutricional lleno de prote\u00edna y por lo f\u00e1cil que es de preparar.<\/p>\n\n\n\n<p>En una pizza, es la gloria, como la &#8220;deep dish pizza&#8221; que ilustra este post, pero tambi\u00e9n pod\u00e9s usarla en<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Empanadas<\/li>\n\n\n\n<li>Tartas<\/li>\n\n\n\n<li>Pastas rellenas<\/li>\n\n\n\n<li>Lasa\u00f1a<\/li>\n\n\n\n<li>Canelones<\/li>\n\n\n\n<li>Tostados<\/li>\n\n\n\n<li>Vegetales gratinados<\/li>\n\n\n\n<li>Vegetales rellenos<\/li>\n\n\n\n<li>Salsas de queso<\/li>\n<\/ul>\n\n\n\n<p>Algunas cosillas a tener en cuenta para que te quede espectacular<\/p>\n\n\n\n<p>El man\u00ed debe ser crudo (es decir, ni frito ni tostado) y sin sal. Preferentemente el que viene sin piel, pero el que trae la piel rojita sirve igual, porque vamos a hacer una leche de man\u00ed y filtrar.<\/p>\n\n\n\n<p>Es importante el remojo previo del man\u00ed, para que est\u00e9 tierno y grandote, si no tienen 8 horas previas para remojarlo (es decir, si lo quer\u00e9s hacer SHA), pod\u00e9s remojarlo en agua caliente durante media hora.<\/p>\n\n\n\n<p>Lo ideal es hacer la leche con agua caliente, porque la misma ayuda a desprender la mayor cantidad de grasa del man\u00ed, logrando una textura igual a la muza de tetita de vaca, peeeeeeeeero, esto lo pod\u00e9s hacer si cont\u00e1s con una licuadora cuya jarra permita l\u00edquidos calientes, si no la ten\u00e9s, es mejor hacerlo con mixer o con agua tibia.<\/p>\n\n\n\n<p>La f\u00e9cula de mandioca no se puede reemplazar por almid\u00f3n de ma\u00edz. La f\u00e9cula de mandioca (o tapioca) le da la textura chiclosa de queso fundido. El almid\u00f3n de ma\u00edz solo espesar\u00e1 la mezcla. Si no consegu\u00eds f\u00e9cula de mandioca, pod\u00e9s reemplazar por f\u00e9cula de papa.<\/p>\n\n\n\n<p>Este queso se puede usar directamente sobre la pizza o lo que quieras apenas termin\u00e1s de hacerlo, esparci\u00e9ndolo con cuchara. Si quer\u00e9s que quede un poco m\u00e1s firme para cortarlo en trozos, debe guardarse en la heladera por lo menos hasta el d\u00eda siguiente.<\/p>\n\n\n\n<p><strong>NOTAS:<\/strong> Si lo quer\u00e9s bien firme, recomiendo agregar 1 cucharada de carragenato Kappa a la mezcla.<br \/>Si lo quer\u00e9s m\u00e1s consistente (textura queso cremoso &#8211; en fr\u00edo), recomiendo agregar 1
