{"id":5870,"date":"2020-07-03T19:01:07","date_gmt":"2020-07-03T22:01:07","guid":{"rendered":"https:\/\/holavegan.com\/?p=5870"},"modified":"2026-04-13T06:16:10","modified_gmt":"2026-04-13T09:16:10","slug":"longaniza","status":"publish","type":"post","link":"https:\/\/holavegan.com\/en\/longaniza\/","title":{"rendered":"Longaniza"},"content":{"rendered":"<p><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/07\/picada05.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-full wp-image-5875\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/07\/picada05.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/a><\/p>\n<p>Esta receta es especial, porque fue creada con el fin de agasajar a Sabri en su cumplea\u00f1os y, dado que tuvo su aprobaci\u00f3n, ac\u00e1 se las comparto.<\/p>\n<p>Sabri era FAN del salam\u00edn en todas sus variantes, tal es as\u00ed que -siempre lo cuenta- &#8220;pec\u00f3&#8221; con algunas rodajas durante su embarazo. M\u00e1s tarde, empezaron a surgir algunas versiones vegetales en el mercado local. Cr\u00e9anme, las probamos TODAS y nos decepcionamos SIEMPRE! Si daban un poco con el sabor, no le pegaban con la consistencia, si ten\u00edan la consistencia no daban mucho con el sabor, en fin \u00a1un fiasco!<\/p>\n<p><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/07\/picada07.jpg\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-5877\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/07\/picada07.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/a><\/p>\n<p>Hasta que un d\u00eda tuve una epifan\u00eda, qu\u00e9 tal si intentaba el salam\u00edn hecho con tomate pero ESTACIONADO como el <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/queso-ahumado-estacionado\/\">quesito de girasol<\/a>??? <em>&#8220;Eso va a secarlo un poco y darle la consistencia ideal&#8221;<\/em>, pens\u00e9. Y me puse manos a la obra, especialmente para investigar el tema de c\u00f3mo llegar al sabor. El k\u00e9fir, sin duda, aportar\u00eda su magia, pero adem\u00e1s necesitaba especias y algo con qu\u00e9 emular la &#8220;grasa&#8221;.<\/p>\n<p><em>Long story short<\/em>, el resultado super\u00f3 ampliamente mis expectativas: un salam\u00edn consistente e intenso. Tan intenso, que decid\u00ed llamarlo longaniza, porque es un poco m\u00e1s picante y a\u00f1ejo que el salam\u00edn com\u00fan. Cr\u00e9anme que hasta mi marido -no vegano- lo prob\u00f3 y le gust\u00f3. \u00bfLo mejor? Se lo mand\u00e9 HASTA TIGRE a Sabri -lo que una hace por su hermana- para su cumplea\u00f1os y le encant\u00f3. Me llam\u00f3 al grito de <em>&#8220;volv\u00ed a comer salam\u00edn&#8221;<\/em>, as\u00ed que si ese no es incentivo para que prueben hacerlo, yo ya no s\u00e9.<\/p>\n<p><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/07\/picada04.jpg\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-5874\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/07\/picada04.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/a><\/p>\n<h5>EMBUTIDO VEGANO Y SANO<\/h5>\n<p>Adem\u00e1s de que no sufri\u00f3, ni muri\u00f3, ni se destrip\u00f3 ning\u00fan animal para formar esta longaniza y eso ya la hace superior a cualquiera, es RAW, porque no lleva cocci\u00f3n y es libre de gluten. Pero adem\u00e1s lleva fermento -en este caso k\u00e9fir-, as\u00ed que no hay modo de que caiga mal al est\u00f3mago como la tradicional.<\/p>\n<h5>LOS INGREDIENTES<\/h5>\n<ul>\n<li><strong>La &#8220;carne&#8221;:<\/strong> la idea de usar tomate para reemplazar la carne, no es m\u00eda, claramente. Ya habr\u00e1n visto o probado alguna versi\u00f3n. Pero, en este caso, me serv\u00eda, no solo por el color, sino porque es un ingrediente que me permite usarlo crudo y que se puede fermentar y estacionar perfectamente.<\/li>\n<li><strong>El fermento:<\/strong> yo uso k\u00e9fir porque LE AMO. Lo tomo todas las ma\u00f1anas en ayunas, es mi motor, adoro prepararlo y siempre tengo a mano. Si no tienen o no les gusta, pueden usar otro fermento: rejuvelac, kombucha, agua de <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/chucrut\/\">chucrut<\/a>, lo que quieran. S\u00ed o s\u00ed tienen que usar un fermento, si no no se puede estacionar, porque se les va a pudrir.<\/li>\n<li><strong>Las especias:<\/strong> adem\u00e1s de sal y ajo y de los cl\u00e1sicos piment\u00f3n y aj\u00ed molido, lleva pimienta, clavo de olor y coriandro. Yo lo que hice fue tostar las semillas y molerlas en el mortero. Calcul\u00e9 a &#8220;oj\u00edmetro&#8221;, pero del polvo resultante us\u00e9 solo una cucharada -de las tres especias mezcladas- y fue suficiente. Si no tienen pueden probar alternativas como: nuez moscada, canela o hinojo.<\/li>\n<li><strong>La &#8220;grasa&#8221;:<\/strong> yo us\u00e9 media horma de un quesito semiduro fermentado de <a href=\"https:\/\/www.crudda.com\/\"><em>Crudda<\/em><\/a> a base de casta\u00f1as de caj\u00fa. Pueden usar alg\u00fan otro queso fermentado que les guste o tengan o hagan, como este de <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/queso-ahumado-estacionado\/\">girasol<\/a> o este otro de <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/queso-fermentado\/\">casta\u00f1as<\/a>. O pueden omitir la grasita, pero se va a perder un poco el look.<\/li>\n<\/ul>\n<p><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/07\/picada06.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5876\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/07\/picada06.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/a><\/p>\n<h5>EL ARMADO<\/h5>\n<ul>\n<li><strong>La &#8220;tripa&#8221;:<\/strong> no les puedo explicar la impresi\u00f3n que me da que usen el tubo digestivo de un animal para embutir y conservar. Ac\u00e1 no usamos tripa, usamos una tela -gasa de algod\u00f3n o similar- para darle la forma deseada, hasta que est\u00e9 estacionado. Despu\u00e9s, puede envolverse en papel manteca o film y conservarse en la heladera.<\/li>\n<li><strong>El bridado:<\/strong> no es necesario hacerlo, ni hacerlo bien, pero ayuda a conservar un poco la forma de la longaniza y que no se anden desenvolviendo cada vez que las tenemos que girar. Yo un poco saqu\u00e9 a relucir mis dotes de nieta de carnicero, jaja.<\/li>\n<li><strong>El estacionado:<\/strong> es imprescindible para dar con la consistencia y sabor deseados. Fundamental, estacionar las longanizas sobre una rejilla similar a la que muestro en el video, cosa que les circule aire por todos lados. Tienen que estar en un ambiente seco, en lo posible, y si tienen la oportunidad de sacarlas a &#8220;tomar sol&#8221; algunos d\u00edas, mejor. Mezclar.<\/span><\/div><\/li><li id=\"wprm-recipe-5872-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\"><span style=\"display: block;\">Por otro lado, trocear el queso semiduro con las manos en pedazos peque\u00f1os. <\/span><\/div><\/li><li id=\"wprm-recipe-5872-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\"><span style=\"display: block;\">Agregar el queso a la pasta de tomates e integrar con la esp\u00e1tula. <\/span><\/div><\/li><li id=\"wprm-recipe-5872-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\"><span style=\"display: block;\">Dividir la mezcla en dos y colocar una porci\u00f3n en un rect\u00e1ngulo de gasa de 30 x 30 cm aproximadamente. Envolver formando una longaniza larga. Esta ser\u00e1 la &quot;tripa&quot;.<\/span><\/div><\/li><li id=\"wprm-recipe-5872-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\"><span style=\"display: block;\">Hacer lo mismo con la porci\u00f3n restante.<\/span><\/div><\/li><li id=\"wprm-recipe-5872-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\"><span style=\"display: block;\">Para bridar, atar el hilo cerrando un extremo, envolver la longaniza y anudar el hilo sobre s\u00ed mismo hasta llegar al otro extremo y anudarlo. Aconsejoamos ce\u00f1ir el centro dividiendo la longaniza en dos, ya que si es muy larga, se parte.<\/span><\/div><\/li><li id=\"wprm-recipe-5872-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\"><span style=\"display: block;\">Llevar a una rejilla elevada y dejar descansar por 15 a 21 d\u00edas hasta que la consistencia sea firme y se hayan reducido en contorno.
