{"id":6321,"date":"2020-10-22T16:07:24","date_gmt":"2020-10-22T19:07:24","guid":{"rendered":"https:\/\/holavegan.com\/?p=6321"},"modified":"2026-04-13T06:16:08","modified_gmt":"2026-04-13T09:16:08","slug":"muzza-de-girasol","status":"publish","type":"post","link":"https:\/\/holavegan.com\/en\/muzza-de-girasol\/","title":{"rendered":"MUZZA DE GIRASOL"},"content":{"rendered":"<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/10\/muzapan3.jpg\" alt=\"\" class=\"wp-image-6326\"\/><\/figure><\/div>\n\n\n\n<p>Esta es una receta de nuestro segundo libro <a rel=\"noreferrer noopener\" href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/comida-internacional-vegana\/\" target=\"_blank\">Comida Internacional Vegana<\/a> y es de nuestras muzzarellas infalibles y econ\u00f3micas, como la de <a rel=\"noreferrer noopener\" href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/muzza-de-mani\/\" target=\"_blank\">man\u00ed<\/a>, la de <a rel=\"noreferrer noopener\" href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/queso-de-avena-derrite-y-gratina\/\" target=\"_blank\">avena<\/a> o la de <a rel=\"noreferrer noopener\" href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/queso-derretible-de-arroz\/\" target=\"_blank\">arroz<\/a>. En el libro la encuentran como parte de la receta de los tacos y quesadillas, en la p\u00e1g. 56. <\/p>\n\n\n\n<p>Derrite, gratina y es s\u00faper el\u00e1stica, por eso la eleg\u00ed para hacer este s\u00faper pan de queso y provenzal que ten\u00eda ganas de reversionar.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/10\/muzapan2.jpg\" alt=\"\" class=\"wp-image-6324\"\/><\/figure><\/div>\n\n\n\n<h5>SOBRE LA MUZZA<\/h5>\n<p>Usamos como base las <strong>semillas de girasol<\/strong>. Se remojan previamente y luego se hace una especie de leche, es decir, se lic\u00faan con agua y se filtran.<\/p>\n<p>El <strong>sabor a queso<\/strong>, en este caso, se lo di con vinagre de sidra de manzana. Este es un vinagre<em> finoli finoli<\/em>, no el de manzana que se compra en el s\u00faper. Es un producto caro, pero que se usa muy poquito y yo guardo como si fuera un tesoro. Rinde un mont\u00f3n, eso s\u00ed.<\/p>\n<p>Peeeeero, pero, hay otra cosa que pod\u00e9s usar en caso de que no tengas, consigas o quieras\/puedas gastar: k\u00e9fir de agua. \u00bfC\u00f3mo? Simple, no reemplaz\u00e1s la cucharadita de vinagre, la omit\u00eds, lo que reemplaz\u00e1s es el agua. O sea, en vez de agua para hacer la &#8220;leche&#8221; us\u00e1s k\u00e9fir . Ojo! Lo usamos s\u00f3lo para dar sabor, no para fermentar, porque al cocinarlo mataremos todas sus bacterias. Prometo hacer un posteo sobre el k\u00e9fir -le amo tanto que se lo merece-, pero por ahora les digo que usen el mismo l\u00edquido que preparan para tomar.&nbsp;<\/p>\n<p>Otro tema que ya hemos aclarado muchas veces pero no est\u00e1 de m\u00e1s anticiparlo: la <strong>f\u00e9cula de mandioca<\/strong> no puede reemplazarse por almid\u00f3n de ma\u00edz. No consiguen la misma consistencia. Si quieren que la muzza se les haga hilos de lo el\u00e1stica -como pueden apreciar en el gif-, entonces usen f\u00e9cula de mandioca (o tapioca) o f\u00e9cula de papa.<\/p>\n\n\n\n<figure class=\"wp-block-gallery columns-1 is-cropped wp-block-gallery-1 is-layout-flex wp-block-gallery-is-layout-flex\"><ul class=\"blocks-gallery-grid\"><li class=\"blocks-gallery-item\"><figure><img decoding=\"async\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/10\/muzapan4.jpg\" alt=\"\" data-id=\"6325\" data-full-url=\"https:\/\/holavegan.com\/wp-content\/uploads\/2020\/10\/muzapan4.jpg\" data-link=\"https:\/\/holavegan.com\/?attachment_id=6325\" class=\"wp-image-6325\"\/><\/figure><\/li><\/ul><\/figure>\n\n\n\n<h5>EL PAN RELLENO<\/h5>\n<p>Resulta que me acord\u00e9 del cumplea\u00f1os de Gloria, una compa\u00f1era de laburo cuando yo trabajaba en la revista <em>Para Ti Mam\u00e1. <\/em>Gory -le dec\u00edamos as\u00ed- nos hab\u00eda invitado a toooooooooda la redacci\u00f3n -en ese entonces \u00e9ramos un mont\u00f3n- a su casa para celebrarlo y resulta que hab\u00eda venido su mam\u00e1 desde Balcarce y hab\u00eda preparado su especialidad: pan relleno con queso. Oh, qu\u00e9 momento glorioso en el cumplea\u00f1os de Gloria!<\/p>\n<p><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/10\/muzapan1.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-full wp-image-6328\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/10\/muzapan1.jpg\" alt=\"\" width=\"680\" height=\"900\" \/><\/a><\/p>\n<p>Claro que en ese entonces yo no era vegana y el queso que se fund\u00eda dentro de ese pan de campo, tampoco. As\u00ed que tan pronto como se me vino a la cabeza la imagen, decid\u00ed que deb\u00eda recrearlo pero en mi versi\u00f3n <em>cruelty free<\/em>.\u00a0<\/p>\n<p><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/10\/muzapan.gif\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-6323\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2020\/10\/muzapan.gif\" alt=\"\" width=\"680\" height=\"900\" \/><\/a><\/p>\n<p>El pan lo hice casero y siguiendo mi propia receta: el pan de campo que ense\u00f1amos en nuestro primer libro: <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/comida-tipica-argentina-vegana\/\">Comida T\u00edpica Argentina Vegana.<\/a> Claro que puede ser cualquier otro pan y puede ser comprado. Se le hacen unos cortes en la parte superior -cuidando no llegar hasta la base-\u00a0 y se rellenan los cortes con la muzza.<\/p>\n<p>Por encima lleva ajo y perejil picados chiquititos y, atenci\u00f3n: yo le puse manteca casera derretida, pero pueden reemplazar por aceite de coco o de oliva. La receta que us\u00e9 de la manteca fue la de nuestra <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/clases-online\/\">clase de l\u00e1cteos vegetales<\/a>, pero claro que pueden usar <a
