Si prestan atenci\u00f3n, es el ingrediente presente en todos los productos basados en &#8220;carne&#8221; vegetal, que no contienen gluten ni soja. Parece que la arveja, es una de las carnes del futuro.<\/p>\n\n\n\n<p>La prote\u00edna de arveja texturizada, lleg\u00f3 a nuestras manos de la mano de <a href=\"https:\/\/www.instagram.com\/premium.vetch\/\" target=\"_blank\" rel=\"noreferrer noopener\">Premium Vetch<\/a> y decidimos probarla en varias recetas, en principio, us\u00e1ndola como solemos usar la prote\u00edna de soja texturizada.<\/p>\n\n\n\n<p>El tema es que es un poco diferente, as\u00ed que ac\u00e1 te van algunos consejos para que puedas sacarle todo el provecho y convertirla en deliciosos platos llenos de prote\u00edna.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/03\/arveja-tex1.jpg\"><img decoding=\"async\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/03\/arveja-tex1.jpg\" alt=\"\" class=\"wp-image-6760\"\/><\/a><\/figure><\/div>\n\n\n\n<h5 class=\"wp-block-heading\">HIDRATACi\u00f3n<\/h5>\n\n\n\n<p>Necesita menos tiempo de hidrataci\u00f3n que la soja texturizada y menos temperatura en el l\u00edquido de hidrataci\u00f3n. La soja la hidratamos generalmente en agua caliente, luego la colamos y la lavamos bastante para sacarle el sabor fuerte a soja. La soja queda con una textura carnosa y reacciona casi como una esponja, se la puede estrujar para quitarle el l\u00edquido. En cambio la arveja, necesita un l\u00edquido a temperatura ambiente y lo absorber\u00e1 sin poder eliminarlo luego, ya que no es tan carnosa sino que se vuelve pastosa. Es por eso, que lo que hacemos es usar menor cantidad de l\u00edquido y dejarla menor cantidad de tiempo.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">SABOR<\/h5>\n\n\n\n<p>Su sabor es mucho m\u00e1s suave que el de la soja texturizada, es por ello, que no necesitaremos hacer malabares para quitarle el sabor fuerte y que luego tome el sabor de los condimentos (como hacemos con la soja). Como la arveja absorber\u00e1 el l\u00edquido y no lo soltar\u00e1, lo que queremos es darle todo el sabor al agua de hidrataci\u00f3n, es decir, colocaremos all\u00ed la magia de los condimentos y sabores que queremos que tenga.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">TEXTURA<\/h5>\n\n\n\n<p>Como dije antes, su textura no es tan carnosa sino que es m\u00e1s pastosa, por eso, en nuestra experiencia, cuando la usamos en recetas que tienen bastante l\u00edquido, termina perdi\u00e9ndose (por ejemplo, en un relleno de empanadas), su textura nos pareci\u00f3 mejor para armar alb\u00f3ndigas y hamburguesas que para imitar la carne picada con textura carnosa.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/03\/arveja-tex2.jpg\"><img decoding=\"async\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/03\/arveja-tex2.jpg\" alt=\"\" class=\"wp-image-6761\"\/><\/a><\/figure><\/div>\n\n\n\n<h5 class=\"wp-block-heading\">BURGERS<\/h5>\n\n\n\n<p>Convertimos arvejas en burgers de estilo &#8220;pollo&#8221; sin usar gluten, para unir la arveja texturizada y darle forma, usamos m\u00e1s arveja, en este caso, la prote\u00edna aislada que viene en polvo.<\/p>\n\n\n\n<p>Con este polvo prot\u00e9ico, lo que hacemos es dar a\u00fan m\u00e1s valor nutricional a nuestra burger, en reemplazo del gluten. Si no pod\u00e9s dar con este ingrediente (se consigue en algunas diet\u00e9ticas, en tiendas de suplementos deportivos y online) pod\u00e9s reemplazarlo con harina de garbanzo o harina de arveja y si no ten\u00e9s problemas con el gluten tambi\u00e9n podr\u00edas usar gluten, harina de trigo o harina de avena.<\/p>\n\n\n\n<p>Se preparan en un periquete, se pueden freezar y tener listas para salir de un apuro. No se desarman ni se desmigan y se pueden hacer a la plancha, a la parrilla, a la sart\u00e9n o rebozar y hacer al horno (o fritas) para una burger al mejor estilo &#8220;pechuga crispy&#8221;.<\/p>\n\n\n\n<p>Los condimentos son a gusto de cada une, yo no uso saborizantes artificiales, pero sepan que si les gustan otros condimentos o sabores, los pueden poner, mi consejo es que todo el sabor lo concentren en el l\u00edquido de hidrataci\u00f3n.<\/p>\n\n\n\n<p>Quer\u00e9s preparar tambi\u00e9n el pan de burger?
