Es que el tofu es s\u00faper proteico, saciador y vers\u00e1til. Lo usamos para reemplazar al <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/scrambled-tofu-re-loaded\/\" target=\"_blank\" rel=\"noreferrer noopener\">huevo<\/a>, para emular al <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/nuggets-de-tofu\/\" target=\"_blank\" rel=\"noreferrer noopener\">pollo<\/a>, para hacer <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/no-salmon\/\" target=\"_blank\" rel=\"noreferrer noopener\">salm\u00f3n<\/a> y <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/carne-vegetal-sin-gluten-y-deliciosa\/\" target=\"_blank\" rel=\"noreferrer noopener\">gluten-free seitan<\/a>, lo usamos como <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/torta-no-ricota\/\" target=\"_blank\" rel=\"noreferrer noopener\">ricota<\/a>, for <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/brazo-de-gitano\/\" target=\"_blank\" rel=\"noreferrer noopener\">postres<\/a> y para mil cosas m\u00e1s. Pero hasta ahora, a excepci\u00f3n de una aproximaci\u00f3n que hicimos la vez que ense\u00f1amos a hacer este <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/queso-de-tofu\/\" target=\"_blank\" rel=\"noreferrer noopener\">quesito<\/a>, no hab\u00edamos ense\u00f1ado a hacer tofu.<\/p>\n\n\n\n<p>Tal vez porque en Buenos Aires se consigue tofu de buena calidad, org\u00e1nico y s\u00faper rico y nunca tuvimos la necesidad de hacerlo con nuestras propias manos. Sin embargo cuando el a\u00f1o pasado, durante la cuarentena m\u00e1s estricta, empez\u00f3 a escasear, me di cuenta que ser\u00eda muuuuy genial saber hacerlo porque seguro hay gente que se encuentra cotidianamente en una situaci\u00f3n similar. <\/p>\n\n\n\n<p>Despu\u00e9s de mucho investigar, de probar varias recetas, con menor o mayor \u00e9xito, llegu\u00e9 a la conclusi\u00f3n de que el tofu es bastante f\u00e1cil de hacer, pero tiene algunos truquitos que conviene anticipar&#8230;<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/05\/tofu_2.jpg\"><img decoding=\"async\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/05\/tofu_2.jpg\" alt=\"\" class=\"wp-image-6914\"\/><\/a><\/figure><\/div>\n\n\n\n<h5 class=\"wp-block-heading\">LA LECHE<\/h5>\n\n\n\n<p>La leche tiene que ser casera. La receta que us\u00e9 es <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/?s=leche+de+soja\" target=\"_blank\" rel=\"noreferrer noopener\">\u00e9sta<\/a> que les compartimos ac\u00e1 hace tiempo. Siempre aconsejamos que usen porotos org\u00e1nicos, se pueden conseguir normalmente en las sucursales <a href=\"http:\/\/www.vitalcer.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Vitalcer<\/a>.  Si les preocupa consumir soja, recuerden que ac\u00e1 tenemos <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/derribando-mitos-la-soja\/\" target=\"_blank\" rel=\"noreferrer noopener\">un art\u00edculo muy interesante<\/a> de la mano de nuestra nutricionista amiga, <a href=\"https:\/\/nutricioneva.com.ar\/\" target=\"_blank\" rel=\"noreferrer noopener\">Eva Henderson<\/a>.<\/p>\n\n\n\n<p><strong>Lleva 4 litros para hacer un tofu de m\u00e1s o menos 1 kg. <\/strong>Es UN MONT\u00d3N DE LECHE y les va a quedar UN MONT\u00d3N DE BAGAZO. Recomendamos guardarlo para hacer estas <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/milanesas-de-soja-reloaded\/\" target=\"_blank\" rel=\"noreferrer noopener\">milangas<\/a> y <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/que-hacer-con-el-bagazo\/\" target=\"_blank\" rel=\"noreferrer noopener\">ac\u00e1<\/a> dejamos m\u00e1s ideas! <\/p>\n\n\n\n<h5 class=\"wp-block-heading\">EL COAGULANTE<\/h5>\n\n\n\n<p>Originalmente se emplea sulfato de calcio o nigari (cloruro de magnesio), que no dejan sabor en el resultado final. Tambi\u00e9n hay gente que lo hace con vinagre de alcohol, yo he probado TODAS pero mi coagulante favorito es el jugo de lim\u00f3n porque, adem\u00e1s de ser s\u00faper f\u00e1cil de conseguir, le deja un toque \u00e1cido que sabe delicioso en las preparaciones posteriores. <\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/05\/tofu_4.jpg\"><img decoding=\"async\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/05\/tofu_4.jpg\" alt=\"\" class=\"wp-image-6916\"\/><\/a><\/figure><\/div>\n\n\n\n<h5 class=\"wp-block-heading\">LA PRENSA<\/h5>\n\n\n\n<p>\u00bfSe puede hacer tofu sin prensa? S\u00ed, con un pa\u00f1o y un colador y algo de peso que podamos ponerle encima. Pero si se desea un bloque como los comprados y hay intenci\u00f3n de hacerlo cotidianamente, recomiendo invertir en una prensa. Es una herramienta fundamental. Nosotras adquirimos esta tradicional y HERMOSA de <a href=\"https:\/\/www.instagram.com\/maritodeco\/\" target=\"_blank\" rel=\"noreferrer noopener\">@maritodeco<\/a> que es de madera y est\u00e1 s\u00faper bien terminada, hecha para que dure mil a\u00f1os. Y le agregamos un pa\u00f1o peque\u00f1o de algod\u00f3n para filtrar. \u00a1La prensa siempre se usa con pa\u00f1o! Recomendamos que sea claro -sin estampados-, de un textil de algod\u00f3n en lo posible.<\/p>\n\n\n\n<p>Y tambi\u00e9n conviene tener a mano algo de peso para que ejerza presi\u00f3n de modo que nuestro tofu quede bien prensado. Yo uso una de esas mancuernitas de 1 kilo que son peque\u00f1as y entra justito entre las maderas de la tapa de la prensa.<\/p>\n\n\n\n<p>Y por \u00faltimo, pero no por eso menos importante, hay que tener una fuente profunda y amplia donde colocar la prensa, ya que perder\u00e1 muuuuucho suero y si no se anticipan a esta acci\u00f3n, van a inundar la mesada -le pas\u00f3 a una amiga, jaja!-. Una opci\u00f3n es poner la prensa en la bacha de la cocina, si es que no le van a dar uso durante la horita -o m\u00e1s- que lo dejar\u00e1n reposar. <\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/05\/tofu_3.jpg\"><img decoding=\"async\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/05\/tofu_3.jpg\" alt=\"\" class=\"wp-image-6915\"\/><\/a><\/figure><\/div>\n\n\n\n<h5 class=\"wp-block-heading\">EL REPOSO<\/h5>\n\n\n\n<p>Me estoy extendiendo too much, pero juro que es necesario. El tiempo de reposo depender\u00e1 de cu\u00e1n firme quieran su tofu. Yo lo he dejado 2 horas y para mi gusto queda muy seco. Para m\u00ed el reposo ideal es de 1 horita, de este modo queda firme, pero tierno.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">LA CONSERVACI\u00d3N<\/h5>\n\n\n\n<p>Si no se usa de inmediato, se puede guardar en un recipiente con agua en la heladera. El agua tiene que cubrir por completo el tofu y hay que renovarla cada dos d\u00edas.
