{"id":7045,"date":"2021-06-30T16:28:47","date_gmt":"2021-06-30T19:28:47","guid":{"rendered":"https:\/\/holavegan.com\/?p=7045"},"modified":"2026-04-12T18:34:01","modified_gmt":"2026-04-12T21:34:01","slug":"brioche-de-papa-y-yapa","status":"publish","type":"post","link":"https:\/\/holavegan.com\/en\/brioche-de-papa-y-yapa\/","title":{"rendered":"Brioche de papa (y yapa!)"},"content":{"rendered":"<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/06\/brioche-de-papa1.jpg\"><img decoding=\"async\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/06\/brioche-de-papa1.jpg\" alt=\"\" class=\"wp-image-7047\"\/><\/a><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Hace muchos a\u00f1os que uso papa para hacer pan, siempre encontr\u00e9 formidable el resultado de la miga, la esponjosidad, humedad y color que aporta este tub\u00e9rculo a las masas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Algo que est\u00e1 bueno aclarar, es que el pan no resulta con sabor a papa, el pan sabe a pan y al tostarlo, hasta te podr\u00edas asustar porque oler\u00e1 a pan con manteca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En este blog tenemos otra <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/vegan-brioche\/\">receta de brioche<\/a>, la verdad es que es una receta muy buena, pero para ser honesta, desde que prob\u00e9 esta versi\u00f3n, ya no hago la otra, de hecho, hago todas las semanas este pan en casa porque mi hijito se hizo FAN y no quiere comer otro pan.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/06\/brioche-de-papa2.jpg\"><img decoding=\"async\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/06\/brioche-de-papa2.jpg\" alt=\"\" class=\"wp-image-7048\"\/><\/a><figcaption>La miga es suave, h\u00fameda, esponjosa y exquisita.<\/figcaption><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">La receta la cre\u00e9 veganizando otra receta, pero a medida que hac\u00eda el pan una y otra vez, fui haciendo ajustes y cambios, hasta dar con esta f\u00f3rmula que les comparto que es la que mejor resultado me dio.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">tips importantes<\/h5>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>PAPA<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Para hervir la papa, recomiendo que lo hagan con la papa entera y con c\u00e1scara. De esta forma el almid\u00f3n se queda en la papa y no se pierde en el agua y la papa queda con mejor consistencia, lo que ayudar\u00e1 al desarrollo de la miga.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>ACEITE<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Recomiendo con devoci\u00f3n usar aceite de oliva, uno suave. Adem\u00e1s de que es uno de los mejores aceites, aporta un color y un sabor excepcionales.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>HARINA<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La brioche se hace con harina blanca, es as\u00ed, yo no soy muy fan de la harina blanca, pero, si us\u00e1s harina integral ya deja de ser brioche, ser\u00e1 un pan hermoso y delicioso e integral, pero todo lo que buscamos en una brioche, ya no estar\u00e1 ah\u00ed.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>DORADURA<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Da fiaca, pero es importante hacerla, porque queda m\u00e1s linda y m\u00e1s rica. Necesitamos alguna otra raz\u00f3n? mixer, colocar la papa, el aceite, la leche y la c\u00farcuma. Mixear hasta obtener una mezcla homog\u00e9nea.<\/span><\/div><\/li><li id=\"wprm-recipe-7046-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\"><span style=\"display: block;\">Colocar la mezcla de papa sobre la mezcla de harina, agregar el agua y mezclar con la mano hasta unir en un bollo tierno.<\/span><\/div><\/li><li id=\"wprm-recipe-7046-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\"><span style=\"display: block;\">Dependiendo de la absorci\u00f3n de la harina, puede que sea necesario usar un poco m\u00e1s de agua, lo importante es que la masa quede tierna, nunca dura.<\/span><\/div><\/li><li id=\"wprm-recipe-7046-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\"><span style=\"display: block;\">Tapar el bol y dejar descansar hasta que duplique su volumen.<\/span><\/div><\/li><li id=\"wprm-recipe-7046-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\"><span style=\"display: block;\">Quitar la masa del bol, dividir en 2 partes iguales y formar dos bolas.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Para formar cada bola, colocar la masa en la mesada. Tomar los extremos y colocarlos hacia el centro, como haciendo un cesto. Luego dar vuelta la bola y darle forma entre las manos haciendo un movimiento circular sobre el mismo eje.
