{"id":7121,"date":"2021-07-27T12:41:21","date_gmt":"2021-07-27T15:41:21","guid":{"rendered":"https:\/\/holavegan.com\/?p=7121"},"modified":"2026-04-13T06:16:04","modified_gmt":"2026-04-13T09:16:04","slug":"pan-de-molde-sin-gluten","status":"publish","type":"post","link":"https:\/\/holavegan.com\/en\/pan-de-molde-sin-gluten\/","title":{"rendered":"Pan de molde sin gluten"},"content":{"rendered":"<div class=\"wp-block-image\"><figure class=\"aligncenter size-full\"><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/07\/pan_molde_SG_3.jpg\"><img decoding=\"async\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/07\/pan_molde_SG_3.jpg\" alt=\"\" class=\"wp-image-7128\"\/><\/a><\/figure><\/div>\n\n\n\n<p>Hace apenas unas semanas posteamos en este blog una <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/brioche-de-papa-y-yapa\/\">BRIOCHE <\/a>deliciosa y muches seguidores nos pidieron una versi\u00f3n gluten free.<\/p>\n\n\n\n<p>Si bien este pan no es una brioche hemos podido dar con una consistencia bastante aireada y esponjosa, dif\u00edcil de conseguir en panes con harinas sin aglutinante.<\/p>\n\n\n\n<h5>DIF\u00cdCIL S\u00cd, IMPOSIBLE NO!<\/h5>\n\n\n\n<p>Este pan es una versi\u00f3n mejorada de uno que Loli aprendi\u00f3 en uno de los talleres online que dicta Venu Sanz, ella se especializa en panificados sin gluten. Loli nos pas\u00f3 esta receta a Maru, a nuestro padre y a m\u00ed. Pap\u00e1 Carlos hizo algunas modificaciones y nos pas\u00f3 su versi\u00f3n. Para que se den una idea lo genial que qued\u00f3, les cuento que tengo varias amigas que no hacen otro pan que no sea ESE.<\/p>\n\n\n\n<p>Ahora bien. SIEMPRE, pero SIEMPRE, se puede seguir mejorando, y para eso no queda otra que seguir probando. De paso sali\u00f3 un versito!<\/p>\n\n\n\n\n\n\n\n<h5>ENTONCES, QUE TIENE DE DISTINTO ESTA VERSI\u00d3N?<\/h5>\n<p>En este caso us\u00e9 tres diferentes tipos de harina, se pueden usar 2 o una tambi\u00e9n. Es importante destacar que cuando queremos reemplazar una versi\u00f3n tradicional de alguna receta y usar harina sin gluten, hay que tener en cuenta que no basta con usar la harina que elegimos y ya. Hay que acompa\u00f1arla de alg\u00fan almid\u00f3n y s\u00ed o s\u00ed de alguna semilla que reemplace la elasticidad del gluten, y obviamente la esponjosidad que le aporta el huevo. El ingrediente ESTRELLA en la mayor\u00eda de los panificados SIN TACC y VEGANOS es el PSYLLIUM. Ya hemos hablado de sus beneficios en <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/cheesecake\/\">esta receta<\/a>.<\/p>\n<p>Y lo que hace la DIFERENCIA en esta versi\u00f3n es que tambi\u00e9n us\u00e9 otro ingrediente MUY GENEROSO y GRAN ALIADO de la cocina vegana: LA AQUAFABA. Hay que montar la aquafaba cual merengue, con ayuda de unos polvitos m\u00e1gicos (cremor t\u00e1rtaro y goma xantana) y agregarlo a la masa, con mucho cuidado y total delicadeza.<\/p>\n<h5>LA CLAVE<\/h5>\n<p>A pesar de todo lo que coment\u00e9 anteriormente, un pan sin tacc ser\u00eda imposible de lograr sin el tiempo de descanso adecuado y un tip MUY importante a la hora de manipularlo es que no hay que amasarlo, solo pasarlo del recipiente en donde lo hemos preparado al molde casi SIN TOCAR!<\/p>\n<h5>IDEAL PARA<\/h5>\n<p>Comerlo con un <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/queso-firme-de-castanas-de-caju\/\">queso fresco<\/a>, para hacer <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/desafio-de-sanguches\/\">s\u00e1nguches<\/a> o bien tostados! De cualquier forma es DELICIOSO!<\/p>\n<p><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/07\/pan_molde_SG_4.jpg\"><img fetchpriority=\"high\" decoding=\"async\"
