Queremos que nuestras recetas les sean \u00fatiles a todas, todos y todes. Es por eso, que decidimos compartir soluciones, para que a la hora de reproducir cualquiera de nuestras recetas, tengas la posibilidad de reemplazar ingredientes y hacerla ATP (apta para todo p\u00fablico).<\/p>\n\n\n\n<p>As\u00ed es, que en esta oportunidad, decidimos comenzar compartiendo nuestra f\u00f3rmula de premezcla para reposter\u00eda sin gluten.<\/p>\n\n\n\n<h1 class=\"wp-block-heading\">PARA REPOSTERIA<\/h1>\n\n\n\n<p>Significa que podr\u00e1s usar este mix en reemplazo de la harina de trigo en cualquiera de nuestras recetas de muffins, budines y <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/?s=torta\" target=\"_blank\" rel=\"noreferrer noopener\">tortas<\/a>.<\/p>\n\n\n\n<h1 class=\"wp-block-heading\">EL ERROR MAS COMETIDO<\/h1>\n\n\n\n<p>Cuando se decide reemplazar el trigo (la harina m\u00e1s usada en panificados) por una harina libre de gluten, se suele caer en el error de cambiar simplemente de harina, por ejemplo, usar harina de arroz en lugar de harina de trigo. Esto tiene un solo destino: FRACASO TOTAL de lo que sea que hayas preparado.<\/p>\n\n\n\n<p>Esto es porque el gluten teje una &#8220;malla&#8221; que hace que la preparaci\u00f3n tenga estructura, sea el\u00e1stica, esponjosa y moldeable.<\/p>\n\n\n\n<p>Es importante recordar:<\/p>\n\n\n\n<h1 class=\"wp-block-heading\"><strong>NINGUNA HARINA SIN GLUTEN SE COMPORTAR\u00e1 jam\u00e1s como una harina con gluten.<\/strong><\/h1>\n\n\n\n<p>Para lograr buenos resultados, necesitamos una mezcla de diferentes harinas, almidones y aglutinantes.<\/p>\n\n\n\n<h1 class=\"wp-block-heading\">INGREDIENTES EN ESTE MIX<\/h1>\n\n\n\n<p><strong>Harina de arroz integral<\/strong><\/p>\n\n\n\n<p>La base de este mix es la harina de arroz, me gusta usar harina de arroz integral en mayor proporci\u00f3n o directamente en su totalidad, ya que, la calidad nutricional de las harinas integrales es superior a las refinadas, porque contienen la fibra y el germen.<\/p>\n\n\n\n<p>Tambi\u00e9n pod\u00e9s usar la blanca en su totalidad, teniendo en cuenta el punto de la nutrici\u00f3n.<\/p>\n\n\n\n<p>Ambas versiones aportan humedad y esponjosidad a la masa.<\/p>\n\n\n\n<p>Puede sustitu\u00edrse tambi\u00e9n por harina de sorgo.<\/p>\n\n\n\n<p><strong>Almid\u00f3n de ma\u00edz<\/strong><\/p>\n\n\n\n<p>Este almid\u00f3n es del tipo seco (quiere decir que queda seco al cocinarse) confiere esponjosidad y ligereza a la masa, mejor volumen y una miga m\u00e1s suelta.<\/p>\n\n\n\n<p><strong>F\u00e9cula de mandioca<\/strong><\/p>\n\n\n\n<p>Este almid\u00f3n es del tipo h\u00famedo (quiere decir que queda pegajoso al cocinarse) proporciona una miga el\u00e1stica y una corteza fina.<\/p>\n\n\n\n<p><strong>Goma xantana<\/strong><\/p>\n\n\n\n<p>La goma xantana es un polisac\u00e1rido natural que se fabrica a partir de ingredientes de origen natural (generalmente se fabrica a partir de la fermentaci\u00f3n del ma\u00edz).<br \/>Funciona como aglutinante en las masas sin gluten.<\/p>\n\n\n\n<p>Decidimos hacer la premezcla con este ingrediente, porque es m\u00e1s f\u00e1cil de conseguir que el psyllium, pero si en tu alacena hay psyllium en polvo (c\u00e1scara de la semilla de plantago ovata) es mucho mejor usar este \u00faltimo, ya que contiene fibra y es un alimento natural. En el caso de usar psyllium en lugar de goma xantana, hay que triplicar la cantidad.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/09\/mixharina2.png\"><img decoding=\"async\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2021\/09\/mixharina2.png\" alt=\"\" class=\"wp-image-7318\"\/><\/a><\/figure>\n<\/div>\n\n\n<p>Habiendo hecho todas las aclaraciones pertinentes, va la f\u00f3rmula. Salen aproximadamente 800 gramos de harina que recomendamos almacenar en un frasco herm\u00e9tico para tenerla siempre lista!<\/p>\n\n\n\n<p><strong>NOTA IMPORTANTE<\/strong><\/p>\n\n\n\n<p><strong>En caso de alergia, intolerancia o enfermedad cel\u00edaca, es importante comprar ingredientes que contengan el sello SIN TACC o SIN GLUTEN, ya que muchas harinas, sobre todo si compramos a granel,
