Lo hago muy seguido, porque me encanta. Queda s\u00faper sabroso y es un plato muy distinguido, a pesar de tener ingredientes muy simples y muy econ\u00f3micos: arroz, papa y puerro.  Como todo risotto, si bien se prepara r\u00e1pido, hay que estarle encima, as\u00ed que los 20 minutos de cocci\u00f3n, hay que pasarlos revolviendo la cacerola con cuchara de madera.  Un plato muy confortable\u00a0y para todos los paladares, este risotto es un \u00e9xito y se ha convertido en mi risotto de cabecera!    <img decoding=\"async\" class=\"alignnone size-full wp-image-1856\" src=\"https:\/\/holaveganc1dev.wpenginepowered.com\/wp-content\/uploads\/2015\/04\/risotto-papa-puerro02.jpg\" alt=\"risotto-papa-puerro02\" width=\"680\" height=\"900\" \/>    Para que el risotto quede cremoso, hay un solo secreto: revolver. Adem\u00e1s de usar un arroz con alto contenido de almid\u00f3n como el Carnaroli o Arborio. Estos arroces, conservan su forma a\u00fan despu\u00e9s de una cocci\u00f3n lenta y van soltando almidones e impregn\u00e1ndose de los sabores de las verduras, dando como resultado un risotto cremoso, cacerola con agua, un poco de sal gruesa, pimienta en grano y unas hojitas de laurel, dejar hervir por 20 minutos.<\/div><\/li><li id=\"wprm-recipe-3961-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Colar el caldo y dejarlo al fuego.<\/div><\/li><li id=\"wprm-recipe-3961-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Cortar el resto del puerro en rodajitas finas, picar la cebolla y pelar las papas y cortarlas en rodajas o en cubos peque\u00f1os, reservar.<\/div><\/li><li id=\"wprm-recipe-3961-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">En una cacerola con un chorrito de aceite de oliva, colocar el puerro y la cebolla, agregar un poco de sal y revolver.<\/div><\/li><li id=\"wprm-recipe-3961-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Incorporar el arroz, revolviendo con cuchara de madera para sellar los granos (es importante no dejar que se doren los granos de arroz)<\/div><\/li><li id=\"wprm-recipe-3961-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Empezar a agregar 1 o 2 cucharones de caldo, seguir revolviendo, incorporar las papas.<\/div><\/li><li id=\"wprm-recipe-3961-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Tapar con caldo y continuar revolviendo.<\/div><\/li><li id=\"wprm-recipe-3961-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">A medida que el l\u00edquido se vaya evaporando, continuar agregando l\u00edquido y revolviendo hasta terminar la cocci\u00f3n (aproximadamente 20 minutos) siempre agregando caldo y siempre revolviendo.<\/div><\/li><li id=\"wprm-recipe-3961-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Una vez que el arroz y las papas est\u00e1n a punto, dejar evaporar el resto del l\u00edquido y apagar el fuego.<\/div><\/li><li id=\"wprm-recipe-3961-step-0-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\">Ahora viene la parte del \"montado\" del risotto, en un risotto tradicional, se har\u00eda con queso y manteca.
