Reconozco que la comida para m\u00ed no es solo nutrici\u00f3n, tengo un\u00a0romance\u00a0con la comida que involucra no s\u00f3lo a mi est\u00f3mago, sino a mi alma y a mi coraz\u00f3n. Los sabores me transforman y me acarician el esp\u00edritu con una magia que va m\u00e1s all\u00e1 de los ingredientes, si se\u00f1ores, yo amo la comida casera, la comida preparada con amor y esmero. Debo reconocer que algunas veces, mi creatividad culinaria se ve un poco afectada, si, les juro que a veces no se me ocurre qu\u00e9 catzos cocinar y termino cayendo siempre en lo mismo. Ten\u00eda unas berenjenas en mi heladera pero no quer\u00eda hacer lo mismo de siempre con las berenjenas (milanesas, lasagna de berenjenas, ratatouille, bel\u00e9n) quer\u00eda convertir a esas berenjenas en otra cosa&#8230; y ah\u00ed se me vino a la cabeza como un flash cargado de emoci\u00f3n: La tarta de berenjenas de mam\u00e1! AAAAAAAAAAAAAAAAAH Mam\u00e1 hac\u00eda la tarta de berenjenas de una manera especial, por supuesto que hac\u00eda la masa casera, bien crocantita y gordita, para el relleno preparaba una especie de &#8220;crema&#8221; de berenjenas, no eran las berenjenas as\u00ed nom\u00e1s, claro que usaba huevos, crema de leche y queso (OH!)\u00a0ingredientes f\u00e1cilmente reemplazables a la hora de hacer una receta apta veganos. Us\u00e9 crema de leche de soja, se puede reemplazar por la <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/2016\/01\/28\/noquis-de-kale\/\" target=\"_blank\" rel=\"noopener noreferrer\">crema de casta\u00f1as de caj\u00fa<\/a> o la <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/2015\/03\/25\/farfalle-con-repollitos-de-bruselas\/\" target=\"_blank\" rel=\"noopener noreferrer\">crema de avena<\/a> caseras. Tambi\u00e9n us\u00e9 queso crema de soja, puede obviarse si quieren que sea soja free. Finalmente us\u00e9 una mozzarella de cashews que yo compro hecha, pueden usar <a href=\"https:\/\/holaveganc1dev.wpenginepowered.com\/2014\/06\/27\/vegan-pizza\/\" target=\"_blank\" rel=\"noopener noreferrer\">queso de papa<\/a> o queso de tofu o el queso que prefieran. La idea es que el relleno quede untuoso y liviano, bien sabroso. Para quitar el sabor amargo de las berenjenas, hay que tomarse el trabajo de pelarlas, cortarlas en cubos y dejarlas en un colador con un poco de sal gruesa, van a despedir un l\u00edquido amarronado y se van a volver tiernitas. Este paso es muy importante, as\u00ed que si ten\u00e9s fiaca dej\u00e1 esta receta para otra ocasi\u00f3n \ud83d\ude42 Claro que pueden usar masa comprada, pero, la masa casera hecha con harina integral le va mucho mejor a esta tarta. Si prepar\u00e1s la masa pod\u00e9s hacer m\u00e1s cantidad y guardarla en el freezer para cualquier otra oportunidad. Bueno, basta de tanta perorata y vamos a mi versi\u00f3n vegana de la tarta de mam\u00e1: <img decoding=\"async\" class=\"alignnone size-full wp-image-2141\"
