Lemon Cookies

Makes 18/24 cookies (depending on size)

  • ½ cup melted coconut oil
  • ¾ cup brown sugar
  • 3 tablespoons almond milk
  • Zest of 2 lemons
  • 1 tsp. vanilla extract
  • cups white flour
  • 1 tsp. cornstarch
  • ½ tsp. baking powder
  • ½ tsp. salt

Elaboración paso a paso

  • In a large bowl, beat with wire whisk oil and sugar.
  • Add vanilla, lemon zest, almond milk and beat for 1 minute.
  • Add half of the flour, baking powder, salt and starch, stir until blended.
  • Add the remaining flour to form a dough.
  • Scoop spoonfuls of dough on a baking sheet, flatten with your hand.
  • Cook in moderate oven over high for 10 or 12 minutes, until lightly browned.
  • Let cool for a few minutes on the plate and then transfer to a rack to finish cooling.
  • Sprinkle with powdered sugar or lemon icing.
