Pumpkin + Sweet Potato Soup

Ingredientes
  

For the soup

  • 1 large pumpkin I used butternut squash
  • 1 large sweet potato
  • 1 large potato
  • 1 onion
  • 1 leek
  • 1 carrot
  • 1 clove garlic
  • Salt and pepper
  • Water

For the toppings

  • Croutons
  • Toasted pine nuts and seeds pumpkin, sunflower
  • Olive oil
  • Sprouts
  • Nutritional yeast

Elaboración paso a paso
 

For the soup

  • Cut the onion, leek and carrot into small pieces.
  • Cut the pumpkin into quarters, peel.
  • Peel the potatoes and sweet potatoes, set aside.
  • Place all vegetables in a large pot with water.
  • Add a little salt and boil for 1 hour.
  • Place in blender potato, pumpkin and sweet potato with a few ladles of broth.
  • Blend until creamy and smooth soup (add more broth to desired consistency)
  • Add salt and pepper and place in a pot.
  • Let the soup heat.
  • Serve hot with various toppings.
