Ingredientes

  • whole wheat flour
  • ¾ cups brown sugar
  • 1 pinch of cinnamon
  • Zest of 1 lemon
  • 2 tsp. baking powder
  • 1 tbsp. of liquid coconut oil
  • 2 tbsp. applesauce
  • ¾ cup of almond milk
  • 2 cups fresh or frozen blueberries

For the crumble

  • 1 cup oats
  • 1 tbsp. of brown sugar
  • ½ cup coconut flakes
  • ½ cup sliced ​​almonds
  • 1 tbsp. coconut oil chilled

Elaboración paso a paso
 

For the cake

  • In a bowl, place the flour, sugar and baking powder.
  • In another bowl, place the milk, applesauce, cinnamon, lemon zest and oil, mix.
  • Place this mixture over the flour mixture, integrate well.
  • Add the cranberries.
  • Place in a pan lined with parchment paper and set aside.

For the crumble

  • Mix all ingredients to form a sand.
  • Placed over the mixture in the mold.
  • Cook on low oven for 1 hour or until golden and a toothpick to prick comes out clean.
  • Cool and serve.
