Cut the tofu into slices of the desired width, set aside.
In a bowl, mix the chickpea flour, water and mustard.
Add the garlic and parsley chopped, salt and pepper.
Embed the slices of tofu into the batter and then with panko or breadcrumbs.
Cook in preheated oven with a little olive oil until golden brown, turning to brown on both sides.
Serve hot.
