Breaded Tofu

Makes 6

Ingredients

  • 1 package firm tofu
  • 2 tbsp. chickpea flour
  • 2 tbsp. water
  • 1 tsp dijon mustard
  • 1 clove garlic
  • 1 sprig of parsley
  • salt and pepper
  • Panko breadcrumbs

Instructions

  • Cut the tofu into slices of the desired width, set aside.
  • In a bowl, mix the chickpea flour, water and mustard.
  • Add the garlic and parsley chopped, salt and pepper.
  • Embed the slices of tofu into the batter and then with panko or breadcrumbs.
  • Cook in preheated oven with a little olive oil until golden brown, turning to brown on both sides.
  • Serve hot.
