Banana + Carob Muffins with Pecan and Chocolate chunks

Makes 6 small muffins

  • 1 cup all-purpose flour
  • 1 tbsp. carob powder
  • 1 banana ripe
  • 2 tsp. baking powder
  • ½ cup of brown sugar
  • ¾ cup oat milk
  • 1 dash of vanilla extract
  • 1 handful of pecans
  • 1 handful of dark chocolate chunks

Elaboración paso a paso

  • In a bowl, mash the banana.
  • Add vanilla, sugar and milk, mix and set aside.
  • In another bowl, mix flour, baking powder and carob.
  • Place the milk mixture over the flour and mix until blended.
  • Add nuts and chocolate chips and mix.
  • Place in muffin tins.
  • Bake in a very low temperature oven for ½ hour or until a toothpick to prick comes out clean.
  • Cool on rack.
  • Sprinkle with powdered sugar and serve.
