Nut-based nougat, sugar-free

Could Mantecol be made sugar-free? That was the first doubt that arose when we tried to improve the nutritional quality and make our recipes even more inclusive when thinking about the menu for our in-person class on gluten-free and sugar-free festive recipes.

The answer took a while to arrive. There were all sorts of attempts until this new version of the classic Argentine peanut dessert that we love so much was achieved.

The first thing you need to know is that of all the recipes here, this one Mante-cooWe do it the most because it's the easiest. With this other one, we've broken more than one mixer. And this one is a bit more complex.

The second thing you need to know is that we mixed a bit of that favorite recipe with this other one from soft nougat, where we had already dabbled in sugar-free Christmas pleasures.

And the last thing you need to know is that I got the peanut flour (which can also be replaced by almond flour, but obviously that's more expensive, and it's all good with fancy celebrations, but it's the end of the month!) I couldn't find it in any health food store and I ended up finding it at my friendly neighborhood Chinese supermarket!

Sugar-free Mantecol-style nougat

Ingredients

  • 250 G day dates (we weighed them already pitted, if they are a little dry, it is recommended to hydrate them in warm water for half an hour and then drain them well)
  • 1 pinch of sea salt
  • 1 cdta. de vanilla (can be powder, paste, or extract)
  • 250 G day peanut flour
  • 2 cdas.de Peanut butter
  • 1 cda.de unsweetened cocoa sifted

In addition

  • Sugar-free semi-sweet chocolate
  • Toasted peanuts

Instructions

  • Place the dates in a blender glass and blend until you get a paste.
  • Place the pasta in a bowl and add the salt, vanilla, and peanut butter, mix.
  • Add the peanut flour, mix well, and "knead" with your hands.
  • Add the tablespoon of unsweetened cocoa, without fully integrating, so that it's streaky.
  • Place the "dough" in a mold lined with parchment paper and flatten.
  • Let cool for a minimum of 2 hours before coating with sugar-free semi-sweet chocolate.
  • After bathing, spread chopped roasted peanuts on the surface and let it cool before consuming.
