Green Salad with Roasted Sweet Potato

grs. leafy greens you like
1
handful of hydrated dried tomatoes or
candied tomatoes
1
handful of peeled and toasted sunflower seeds
1
large sweet potato
Salt
pepper, olive oil, lemon juice
1
pinch
of brown sugar
Elaboración paso a paso
For sweet potatoes
Peel the sweet potato and cut into small chunks, bite size.
Place in a oiled baking sheet, sprinkle with a little sugar,
Cook in hot oven until golden, rotate to brown all sides.
For salad
Wash and drain the leafy greens,
Prepare a dressing with lemon juice and salt, add olive oil and emulsified.
Place in a bowl leafy greens, mix with the dressing, add the tomatoes, seeds and sweet potatoes.
Serve immediately
