Ingredientes
  

  • 100 grs. short pasta penne / Fussili / Farfalle
  • 100 grs. leafy greens
  • 1 cup cherry tomatoes
  • 1 ripe avocado
  • 1 cup baby carrots
  • Toasted pumpkin seeds
  • Hemp seeds

For the dressing

  • 1 handful of cashews soaked for 2 hours
  • Lemon juice
  • Salt pepper, olive oil

Elaboración paso a paso
 

  • Use leftover pasta or cook and drain the pasta, allow to cool.
  • Cut the cherry tomatoes in half and slice the ​​carrots.
  • Cut the avocado into cubes.
  • Mix the pasta and vegetables in a bowl.

For the dressing

  • Process the cashews with a little water, salt and lemon juice until creamy.
  • Season the salad with salt, pepper, lemon juice and olive oil.
  • Add spoonfuls of cashew cream on top.
  • Finally, add the seeds and serve.
