Green Salad with Roasted Sweet Potato

  • 200 grs. leafy greens you like
  • 1 handful of hydrated dried tomatoes or candied tomatoes
  • 1 handful of peeled and toasted sunflower seeds
  • 1 large sweet potato
  • Salt pepper, olive oil, lemon juice
  • 1 pinch of brown sugar

Elaboración paso a paso

For sweet potatoes

  • Peel the sweet potato and cut into small chunks, bite size.
  • Place in a oiled baking sheet, sprinkle with a little sugar,
  • Cook in hot oven until golden, rotate to brown all sides.

For salad

  • Wash and drain the leafy greens,
  • Prepare a dressing with lemon juice and salt, add olive oil and emulsified.
  • Place in a bowl leafy greens, mix with the dressing, add the tomatoes, seeds and sweet potatoes.
  • Serve immediately
