La pastafrola es, junto a la de NO ricota, una de mis tortas favoritas. Y como suelo hacerla bastante seguido decidí probar una nueva versión. La versión SIN GLUTEN! Les cuento que quedó MUY bien. Incluso, hasta más rica que la tradicional, porque (los que consumen harina de arroz me van a entender) esta harina tiene una textura granuladita, que se siente crujiente al morder y es realmente muy agradable al paladar.
En el relleno también apliqué algunos cambios. Lo cociné en una cacerolita, junto con un chorrito de kéfir y una cucharada de melaza de caña. El kéfir le aporta un leve sabor a alcohol, por lo que si no consumen y no tienen, pueden reemplazarlo por un chorrito de oporto, vino o licor. Y la melaza es opcional, pero, a mí me encanta usarla porque le aporta color, un dejo amarguito y suaviza la textura del membrillo. Además, el frasco de melaza te puede durar meses, ya que en la mayoría de las recetas hay que usar muy poquita. Mirá: Para este mantecol y estos helados también la usamos.

Ingredientes
Para la masa
- 1 taza de harina de maiz
- 1 taza de harina de arroz
- 1/2 taza de fécula de maiz
- 1/2 taza de azúcar impalpable
- 2 cditas polvo para hornear
- La ralladura de 1 limón
- 3/4 taza de aceite de coco en estado sólido a temperatura ambiente
- c/n de leche vegetal si fuera necesario
Para el relleno
- 250 gr de Membrillo
- 1 chorrito de kéfir (opcional) también podés reemplazar por vino, oporto o licor
- 1 cda melaza de caña opcional
Además
- c/n de coco rallado
Elaboración paso a paso
Para la masa
- Tamizar los polvos y agregarle el aceite, la ralladura y la leche (si fuera necesario)
- Integrar hasta formar una masa.
- En un molde de 18 cm de diámetro colocar un poco más de la mitad de la masa y cubrir la superficie.
- Estirar con palo de amasar la masa restante y cortar tiras de 1 cm de ancho (aproximadamente).
Para el relleno
- Cortar el membrillo en pequeños cubos y colocarlos en una cacerola junto con el resto de los ingredientes.
- El fuego debe estar bajo, para que no se queme. Solo hay que derretir el dulce (que está firme) para que se integre con los demás ingredientes y para poder esparcirlo bien sobre la masa cruda.
Para el armado
- Colocar el dulce obtenido sobre la masa y cubrir formando un enrejado con las tiras de masa.
- Llevar a horno precalentado 180° durante ´20 aproximadamente.
- Espolvorear el coco rallado por encima y dejar enfriar.
