Resulta que la otra vez fuimos con las sistas a cenar a uno de nuestros lugares 🌱 favoritos y pedimos varios platos para compartir -si es por nosotras probaríamos la carta entera-. Uno de esos platos tenía quinoa crocante. No sé cómo es que no la había probado antes, ni cómo es que viví casi 43 años sin conocer esta maravilla. Así que les dije a las chicas: «la voy a tener que hacer».
Para mi sorpresa, es una receta que HACE MEDIO PLANETA. De verdad es que no entiendo en qué taper estuve viviendo todo este tiempo. Quinoa crocante, crispy, crijiente, you name it. La web está llena de información y tips.
Básicamente esta es una de esas recetas que no es una receta, porque lo único que necesitás es tener quinoa cocida y mandarla al horno bajo en una placa. Es decir que la podés hacer con sobras. Originalmente ni aceite lleva.
Queda con una textura increíble, súper crocante y versátil porque, al no estar saborizada se puede usar tanto para dulce como para salado. Yo la usé para agregarle magia a mi ensalada y luego me animé a mezclarla con la preparación de la granola casera. Quedó un fuego!
Claro que se puede saborizar a gusto y piacere para generar distintas sensaciones, por ejemplo:
PARA DULCE
Va bien con extracto de vainilla, canela, cacao, algún sirope, ralladura de cítricos -o polvo, como el de mandarina-, coco rallado. Podés mezclar varios, usar todos, sumar otros.
PARA SALADO
Pimentón ahumado o merken, ajo en polvo, cúrcuma, jenjibre, oliva, orégano, tomillo, romero, salsa de soja, sal marina, pimienta, etc.
IMPORTANTE: Laven bien la quinoa. Especialmente si es orgánica -en mi experiencia suele ser más amarga-. No es fácil, porque es tan petit! Yo la meto en una de estas eco-bolsas y la enjuago y escurro sin perder demasiados granos.

Ingredientes
- 1 taza de quinoa
- Agua para lavar y hervir
Elaboración paso a paso
- Lavar bien la quinoa.
- Colocarla en una cacerolita con agua y llevarla a fuego medio.
- Cocinar hasta que esté tierna.
- Escurrirla y colocarla en una bandeja para horno sobre placa de silicona o papel manteca (previamente aceitado).
- Cocinar a fuego bien bajo. Remover cada 10, 15 minutos para que se vaya dorando pareja.
- Una vez que está dorada, retirar, dejar entibiar y consumir o pasar a un frasco hermético.
